Original Chubby's is an actual Denver institution. One of the great, proper, rapidly crafted Mexican restaurants in the nation. The staff is positive chaos distilled, kind and attentive but professionally no nonsense because they have to be: there will be a line, you will order and wait... But it is all very much worth it. Im from out of town, and my husband recommended this place, and he was right about how good everything was.
We waited about 15 min for our food, which wasn't long at all for how busy it was. I love the option to grab a seat or go, no waiting for a go bag if you even have leftovers. The chicharones and green chili were my favorite parts.
It was clean, quick, and amazing food. I will be back and seriously recommended for everyone.
