Looks like I missed a real opportunity to take a bunch of cool pictures at what was a really amazing vegan restaurant - and what I did take was one admittedly not very good - picture of what WAS a VERY delicious salad. We enjoyed the heck out of sitting on the patio, composting everything, and drinking unlimited sparkling water on tap, so I would and WILL absolutely return to the spot next time I am in Denver!

I LOVE vital root. I work in the area and my boss and I have our meetings here. I have never been disappointed with the food. It's allergy friendly and everything can easily be made vegan. They can accommodate for a lot of different diets without sacrificing flavor and texture. The cashews queso is unparalleled. Its better than most real queso I have had. The falafel wrap is my go to for something healthy and filling. They have a gorgeous small back patio that is shaded, great for summer and the front patio has direct sun the rest of the year. I will always recommend this place to people touring the neighborhood.Update: they recently added a "chicken" and dosa waffle that you MUST try. Run, don't walk it is to die for!Update Update: they have changed a lot on their menu and all of it is still FIRE. They got rid of the only thing I hated (the sprout head sandwich) and from what I can tell they have better less dry gf bread. The root vegetable Reuben is so good and filling but because it's carby vegetables instead of meat it does leave you hungry in about two hours but still worth it imoSad update: they got rid of their hemp cocao cookies in favor of FAR inferior choc chip cookies. They are weird, hard and don't have as good of a flavor.Vegetarian options: 100% vegan restaurantDietary restrictions: Also 99% gluten free!!

I got the regular falafel wrap with you also have it as a breakfast with eggs. The food was great. I just like more food. Prices are ok to mid price range. The wrap cost me $18 with tip. Ambiance is comfortable. Booths and chairs. The booth is 2 set of long booths separated by tables spaced apart. Service was great. And best of all it is vegetarian and they can also make it vegan for you.

Amazing spot in Denver! My family and I stumbled upon this restaurant today and we loved everything that we ordered. Some of the best vegetarian food around. We got the tacos, Korean stir fry, cauliflower wings, and beet lemonade.

We were greeted warmly, and they were happy to answer any questions we had about the menu. Love the amount of vegan options they had and the prices were not too bad either. We ordered the happy our tacos and Korean bbq “wings”. Our food got to the table within 5 minutes, and the dude offered to get us water or utensils even though they were at a self serve station we could easily grab them from, which was super kind. The food was amazing! Tacos were delicious and refreshing, the wings were crispy and the house made sauces complimented them perfectly. Very happy with our experience here, thanks for the great vegan food!Vegetarian options: Entire menu is available vegan

Delicious! I'm not vegan or vegetarian but I love the selection of meals with lots of whole foods as I try to eat as close to paleo as possible. The reuben with potatoes was tasty and filling. I love that everything is gluten free! There are different areas of the restaurant you can sit in depending on the vibe you are looking for.

Super warm atmosphere, very friendly and hospitable staff. We were greeted right when we walked in and staff answered all of our questions about portion sizes and vegan dietary restrictions. When they brought out our food, the server even offered to get us utensils and water from the self-service station. Food came out in under 10 minutes. Happy hour is a great deal for the price, me and my partner were satisfied sharing the banh-mi tacos and Korean cauliflower wings. The banh-mi tacos absolutely blew us away with all the fresh flavor. We're visiting Denver from PDX and this is by far the best food we've had!

Good vegan food. I ordered the Banh Min tacos, Korean Bowl, Vital Root Salad, and some cauliflower wings.Overall very good and tasty, my main dish was not the most tasty and did expect more. For a healthy food place I recommend it.

The perfect place for a quick meal. I've tried their Korean tacos, falafel, and all were fine but my favorite thing to get here is their vegetarian Cobb salad. Dare I say I enjoy it even more than a regular Cobb?? I love their vegan bacon and the addition of dates and nuts. This salad is humongous and can be split into two meals for sure (or one large meal for ravenous appetites).
