Chimayo Stone Fired Kitchen is a wonderful dinner spot with professional and attentive staff. The atmosphere is fantastic, featuring brick walls and offset lighting that create a great ambience. The food is well-prepared and presented, with dishes such as Chimayo bread, smoked salmon patty, and chili relleno receiving high praise. The cornbread appetizer was delicious. The salmon entree with apples and seasoned pecans was scrumptuous. The Chimayo bread serves as a fantastic appetizer, offering a unique butter/honey spread that's better than typical dinner rolls. The restaurant also offers delicious cocktails and a unique pizza experience, highlighted by the flatbread steak sandwich, which is made with their pizza dough and stuffed with roasted bell pepper, onions, mushrooms, steak, and a very nice sauce. The steak is really good, and the rib eye was the best in years, cooked perfectly. Vegetarian options are also available, making it a great place to visit when in the area. The serving staff is extremely professional, with a team that stands out in this tourist town, ensuring a memorable dining experience. The place has a cool vibe, interesting decor, and amazing food. The atmosphere was western, but not kitshy. Service was attentive and responsive. They had a very pleasant experience.
