We stumbled upon this place when the place we had picked out was actually busy. The atmosphere is fantastic. Brick walls. Offset lighting. Fantastic ambience.
Serving staff was extremely professional. We had a serve by the name of Nick. But as we looked around the restaurant and noticed their entire staff and Chef crew in the back that you can see from your table are very professional. Very unique for a tourist town.
We chose the Chimayo bread for an appetizer. It was fantastic. Way better than Texas roadhouse dinner rolls with a very unique butter/honey Spread.
My wife shows the cauliflower steak. Extremely well prepared. Cauliflower was a 1 inch stick slice of cauliflower with roasted cherry tomatoes, zucchini, wedge, tomatoes, shaved Parmesan, and a very nice light seasoned sauce on top. Fantastic.
I chose the flatbread steak sandwich because of the reviews and the recommendation by the server. It was also fantastic. Made with their pizza dough. Stuffed with roasted bell pepper, onions, mushrooms, steak and a very nice sauce. Like a calzone except that the bread wasn't closed over. It was fantastic. .

The fish tacos were fairly tasty with yummy toppings but the fish was overcooked/tough and a little too "fishy" (I'm not sure what type of fish was used). My sister's salad appeared very nice.

Server forgot about us the entire time. Our food came out cold. I’m guessing it died in the window. Drink refills came after we finished eating. Waited for the salt shaker for days… I guess they don’t care about small business owners on business lunch.

Matthew greeted us with a smile, accommodated our seating preference, and thus began a very pleasant dining experience at Chimayo in Durango. Casey meticulously attended to our table and as the evening continued, engaged us in pleasant conversation which is out of the ordinary in this hustle bustle world. We began with “Smoking Gun” cocktails, a unique and tasty concoction. The bread starter was piping hot, and my apple and root vegetable seasonal soup was delicious. Randy’s warm roasted vegetable salad was a meal in itself. Our entrees, the stuffed poblano pepper and grilled red snapper were delicious as well. The peach desert looked great, but our appetites were already fully satiated, and decided to pass. After we had paid our tab and were heading for the door, Matthew and Casey caught up with us and we enjoyed several more minutes of conversation with these two charming young people, learning more about their lives and plans for the future. Good food, excellent service and a one-of-a-kind restaurant experience.

I love the beer taps here. They are the cleanest coldest lines in town. They carry local brews and also always have a good selection. Including ales, darks, ipas, and a whit on nitro! Other places only have light beer for summer(eye roll). Cocktails are fab too. Smokey Paloma and the Animas Martini are favorites.
Their food is delicious. My current favorite is a hummus tabouli dish. My friends tell me their prices keep them from coming more often. While that is true for me, I would also like more attentive service. I waited 15 min for a beer one day because they thought I was going to get food too. And yesterday I couldn't get the waitresses attention when it was time to go. 10 min or so.
I get it, waitresses and bar service is hard. But, it is something all of Durango could improve upon. Especially, at places locals feel they are outpriced at.
