The Boardroom is one of my favorite lunch spots in Edwards, but their breakfast needs an equal spotlight. This morning I got a breakfast burrito to eat at work that provided one of the best eating experiences of my life. Transcendental is a good way to start describing the pork green chili filling and how fluffy the eggs and perfectly the cheese brought it together. I texted my husband to tell him about the emotional affair I had with this burrito. Five stars is not enough.
If you’re in Edwards or anywhere in the Vail Valley and you’re looking for consistently outstanding breakfast or lunch, The Boardroom is hands-down my favorite spot!
