Moved to Canon City a year ago, and finally made it to this locally famous restaurant. We tried on both the weekend and during the week, so we could have both the prime rib and the filet mignon. Our experience was the same both times - seated quickly, friendly staff, and good margaritas. However, both the prime rib and filet were average at best, probably a 6 out of 10. You would think that a restaurant that only serves these two items would use prime rated meat, but they obviously do not. Hard to believe that so many reviews rave about the steaks, because they were a little tough and a little dry. We think that rural Colorado people just don't know what a great steak is all about - one of the advantages of coming from a big city lifestyle, I guess.

My son and I enjoy getting out of the Springs. We especially enjoy coming to Florence and going to eat here. Our visit today was exceptional. We had the steak and it was cooked amazingly and the sides were delicious too. The service is always great. Maybe something to do with a small town and kind people. It was the best meal I’ve had in a long time. Almost felt like a home cooked meal but better because I didn’t have to cook it. We will continue our time to time visits to this restaurant. I’d highly recommend the drive to get a great steak or prime rib. Also the prices are more than reasonable.

Small town saloon/steakhouse that is like stepping into a time machine with both prices and atmosphere. The cost of a steak or prime rib is incredible for what you get. Service was warm and quick. A great place to have dinner after soaking in one of the nearby hot springs.

We always love Prime Rib at Quincy's. They still had rare 30 minutes before close. Tricia was great and very attentive.

A nice little place in Florence, CO. Made the trip from Pueblo West, CO to try this joint.
Atmosphere is lovely. Prices are amazing.
Food is good…would have liked the option to choose the dressing for the salad. Filet mignon was nicely seasoned.
Baked potato seemed to be from the day before; the skin was thick and dry, and the potato itself was not fluffy.
Service was adequate, but our finished platters just sat on the table for what seemed like 15 minutes.
The host gave us a deadline on how much time we would have at our table, which was fine, but it was rather odd way to begin a dinner knowing that there was a set amount of time…the slow service didn’t help the situation at all, and ended up making us rush through dessert.
You should get there early.
