My wife is Latinex, and we often joke that she is the best Mexican chef in town when considering the severe lack of Mexican culture in Fort Collins cuisine. However, this place is arguably the best Mexican food in town, and I would recommend it to just about anyone. Everywhere else we have gone, we refuse to return to because the food has been watered down to accommodate complaints from the folks who live here that have no taste.
