Food is phenomenal. Tonkotsu is legenday. Must have it with the egg! One time the miso soup wasnt quite as strong of a miso flavor as my wife wanted, so we asked for some extra miso to add in and they remade the whole bowl free of charge and it was better. Very impressed with Gaku.

placed a mobile order just to have to wait 15 to 20 minutes past the estimation and having to go inside just a wait even longer just to hear the workers chitter chattering the whole time plus my drink wasn’t made. There was no point in making the mobile order then I placed it to have it ready so when I walk in, I’m ready to go the last five times I’ve been everything‘s been right every time I come in the nighttime their struggles plus manager was really buttiter the guy with the being sprout on his head.

Imma regular & the staff’s service gives attentive & friendly, I appreciate them. Whether i’m dining in or ordering to go, my favorite detail is the tv screens be havin anime on, which is refreshing for Fort Collins.
The food gets three stars for me, though; I don’t get ramen here, yet I’ve enjoyed their appetizers and fried rice, the later of which can be hit and miss in quality. But when it’s good, it’s good; the old happy hour menu was peak.
I recommend the gyoza, buns, and alternate between vegetable, chicken, and pork fried rice.

I love ramen, have made tonkotsu ramen from scratch and had it in Japan here and there. This is great ramen. The marinated soft boiled egg was great, the chashu pork was some of the best I’ve had. Broth was good, not insane. Overall super solid.
Here’s my small nitpicks: - a bit undersalted to me…adding a dash of soy sauce to the broth balanced things out
- a few of the things I’d expect to be standard in a bowl of tonkotsu ramen were add-ons here, chashu pork, seaweed, and the boiled egg for instance. Egg was an extra $2, pork chashu was +$4.
- kind of pricey! I wouldn’t expect a bowl of ramen to get above $25. Despite the time that goes into making the broth, the tare, the aromatic oil base, it’s not a fancy dish but the price mirrors many entry level fine dining prices. Maybe it’s just downtown Fort Collins prices in keeping a storefront open but to me, ramen is a humble, deeply tasty quick lunch or dinner and the price just seemed high.
In all I’d absolutely come back but in my imagination I’m helping them workshop this in the kitchen a bit.
