The food is delicious, makes it feel like the quality is way better than what your paying for. Don't get me started on the pizzas!! Love this place!

We found this place, it's way out of town towards Colorado monument. It is extremely hip with a '70s vibe and decor interior. The bartender was extremely passionate about their mixed drinks which they have several on tap. All of their distilled spirits are free to sample You don't even have to buy a flight. Plenty of nice places to sit there and outdoor seating when it's warm out. Plus there's a lavender farm where you can go pick your own. Highly recommended.

Otherwise you want to hang out in the large yard with lots of seating choices, fire pits, yard games, and fun decor and lighting. There is also a yurt with tables and another bar for food and cocktails. Service is always with a smile. Food and drinks are fairly priced and perfect for hanging out. Dog friendly for well-behaved pooches.

This family run distillery and lavender farm is an alcoholic wonderland, full of epic innovations and eclectic environments. There are three very fun and very different areas to enjoy your drinks in, two of which have completely different drink menu's. This encourages experimentation and maneuverability between the environs of this one-of-a-kind distillery and tasting room(s).
Drinks range from handcrafted classics in the Yurt Bar to batch cocktails in the Test Bar that have a lot more surprising flavors and pizazz than a cocktail connoisseur might expect coming from a tap. There is actually a deep and passionate understanding of cocktail culture and history being cultivated here, with new additions of rare or forgotten creations being regularly rotated onto the menu. Good and cheesy knife-and-fork Roman style pizza squares are here to help soak up all the alcoholic fun as well.
The rum, vodka and whiskey are good and confidently crafted, but the star of the show here remains the gin. The Trooper Traverse barrel-aged gin especially is one of the finest examples of the spirit made in Colorado, (or anywhere). Highlands Distillery offers up some of the most fun you'll ever have in a distillery, and the exceptional cocktails and vibes keep this place from being just a gimmick and instead make it a paradise.
Great pizza, excellent cocktails, and even better staff! We had inquired about reserving the distillery for our wedding reception, which was out of the normal for them, and Dylan and his staff were amazing. Incredibly accommodating staff and the entire event could not would not have been possible without their help, which was far above what was expected.
Anything from a laidback evening drink to a fully private event, I cannot recommend this place enough. This has been our favorite spot in GJ for years, and will continue to be!

So we’ve been going here for over a year now. This summer they remodeled and made the front building a comfy bar area and now offer beer. We stopped and totally were satisfied as usual. If you’re on vacation and in the area this is a must.
