This restaurant was a little gem. We enjoyed the food and the atmosphere. The service by Jillian, the drinks, and the appetizer were great.
We had the fried local oyster mushrooms to start, which had a zippy honey drizzled on top with fresh oranges to squeeze on them. I wish we had asked for the honey on the side for dipping -- my hubby and I were trying to soak up as much as we could that was drizzled on the plate, and it would have been more efficient to dip them.
They had a nice selection of cocktails. The Basil Smash was particularly excellent.
As a vegetarian, I appreciated that all the pasta options were vegetarian or vegan. Adding protein was optional.

Ribeye and shrimp scampi was awesome.
They made a mean martini and margarita.
Tuxedo cherry chocolate mousse for dessert was to die for.

We sat outside and enjoyed the food and live music on Saturday night. Very good for a small-town restaurant. This was our 3rd time and will be back.

We are so lucky we were able to enjoy this cute little restaurant, last minute.

We enjoyed :
Meatballs
Brussels sprouts
Shrimp scampi
Chicken Parm
Spaghetti and grilled chicken

Cocktails, wine and dessert left us so full but ready to come back ( next time we are in town)!

Stiano Italian Trattoria in La Veta, Colorado, is an absolute gem! Nestled in the historic La Veta Inn, this restaurant delivers an unforgettable dining experience. The food is nothing short of spectacular—authentic Italian dishes crafted with fresh, high-quality ingredients. The walnut pesto, chicken piccata and chicken parm were standouts, bursting with flavor and showcasing the chef’s creativity and passion for traditional recipes with a modern twist. Every bite was a delight, from the perfectly cooked pasta to the tender, flavorful ribeye.
The service is impeccable, with a warm and attentive staff that makes you feel like family. Our server, Jillian, was a highlight, offering spot-on recommendations and genuine hospitality that elevated our evening. The atmosphere is equally inviting, blending cozy, rustic charm with a lively vibe, complete with a fireplace and occasional live music that adds to the ambiance without overwhelming conversation.
What truly sets Stiano apart is the wonderful people behind it. You can feel the heart and soul poured into every detail, from the carefully curated menu to the welcoming energy of the team. It’s clear they’re dedicated to making every visit special, and it’s no surprise locals and visitors alike rave about this place. Stiano’s – A Hidden Gem in La Veta, Colorado

If you’re anywhere near La Veta and have a craving for Italian, Stiano’s is an absolute must-visit. This charming spot brings authentic Italian cuisine to the heart of Colorado with warmth, flavor, and a personal touch that’s hard to find elsewhere.

From the moment you walk in, you’re welcomed by a stellar staff who make you feel like family. The service is attentive without being overbearing—perfectly paced for a relaxed evening. Whether you're out for an intimate date night or dining with the whole family, Stiano’s manages to strike the right balance between cozy and accommodating.

The menu is a celebration of traditional Italian recipes, made with love and high-quality ingredients. Expect rich pastas, perfectly seasoned sauces, and hearty entrees that hit all the right notes. Don’t skip dessert—the tiramisu is a standout!

It’s funny—writing reviews is the easy part. Taking pictures of our glorious meals, on the other hand? Nearly impossible. This is the kind of restaurant where your tastebuds come alive and take over before your camera even has a chance. Each bite is so good, you forget everything else.

Stiano’s isn’t just a restaurant; it’s an experience—one that combines delicious food, a welcoming atmosphere, and genuine hospitality. Highly recommended for locals and travelers alike.

We sat in the grotto while Michael and Dianne performed fantastic music including requests. Jillian was an amazing server, so fun and very helpful. Travel made fantastic drinks at the bar - the La Veta Verde. The food was amazing! The myself are a MUST! I'm not a mussel eater myself, but I tried one and the seasoning was delicious! We both had the ribeye and it was delicious too! I highly recommend visiting here if you're in town or even make a side trip - it's worth it!

I waited for a good 5-10 minutes at the front podium waiting to be greeted. A server even walked up there to get something and completely ignored me. I stayed in La Veta 3 nights literally next door to this place and it turned me off. You can’t say “hi someone will be with you?” I drove to the taco bell 20 minutes away instead.

Updated to Respond to Restaurant: This was on Sunday, September 29th around 7 PM at night. I was bummed because I had stood there looking at the menu thinking about how badly I wanted those brussels and how convenient it was to have a nicely rated place right next door.

My husband and I made a late reservation for our anniversary. The staff was very accommodating and attentive. The food was like nothing we had ever experienced - in the best way! We had the Burrata plate, Cesar salad, duck breast and steak - everything we ate was delicious. The executive chef even came to our table and answered some questions we had about how the food was prepared…. We try and come to this area every year around this time and can not wait to eat here again!!
