El Mirador has been my families go to Mexican spot for a LONG time. Fantastic food, great service, great atmosphere. I'm so surprised at the bad reviews, I've never once had a bad experience here. They have the best Carne Asada in the metro imo, and their molcajete bowls are BOMB.
Although the food is authentic Mexican, I feel it was lacking the full experience. Red enchiladas were not very spicy. Menudo was the same. Both had good flavor. Large portions were a plus. The staff was very attentive and friendly. Ordered cucumber lime agua fresca with mint. It was made to order and was delicious and very refreshing. Would definitely visit again to try a different dish.
El Mirador has some of the best authentic mexican food I've ever tasted! Everything we had was flavorful and seasoned to perfection! The food portions are pretty large so be prepared to take home leftovers. We will definitely be visiting again whenever we are in Colorado.
