Rubicon makes great coffee, and the owner is friendly and knowledgeable. He was willing to take the time to listen to the kind of coffee I was looking for, and make recommendations both in the roast of coffee and the method of brewing. Super solid place all around.

Stoped here last weekend in Paonia. Super cozy atmosphere, nice staff and inviting aroma. Bought a lb and cold brewing it this weekend.
