It's hard to pick the best green chile in Pueblo but Romero's is right near the top! This is a great mexican food for breakfast place with lots of options!

One of my favorite places, whether it's just running by to pick up a breakfast burrito, or having a working lunch with colleagues, or a meal with my family.

I'm giving Romero's five stars because of taste and authenticity. When they say "hot" pay attention. I scarfed down some hot green chili. It's the first time non years nice even felt a tingle. This one made me sweat and I loved every minute. My spouse got half and half hot mild. Green chili. We coupled that with the family enchiladas which came with beans and rice.

The beans and rice were excellent. Like right out of my grandma's pan.

If you like authentic Mexican food this is your place.

Honestly the service sucks they screwed up an order I tried to call them and they got pissed off and hung up on me. Sent me the wrong item and missing $60 of my $75 order. Amazing.

Stopped by here one day on a whim and it's been my favorite breakfast place ever since. The absolute best chile smothers some pretty fantastic food. It's usually always popping and for a good reason.

We love our waitress, Catrina! She is amazing. She sees us come in and we are greeted with greetings and says she missed us. She is very experienced and is quick on her feet. I am a previous restaurant owner and I understand how difficult it is to find good help; you have found an excellent worker in Catrina.

Have always heard good things about Romeros so my mom and I wanted to give it a try. I will not be making that mistake again. We went on a Monday and there were only about three clean tables all large group tables but we had to sit there because there were no others available. There were about 5 tables that hadn't been cleared. Our table was sticky. We waited about 15 minutes and no server or anyone came to our table and two couples walked in after us. About 5 minutes after they sat down their drink order was taken and then ours was, we received menus at that time. Another 15 minutes goes by and still had not received drinks or even put in our order. We decided to leave when the server again helped the customers who arrived after us first. Whilst we were still waiting on drinks. We left and went to Millberger (Highly suggest, in and out in 40 minutes, food was incredible. Amazing cinnamon rolls.) Will not be returning. Parking was a nightmare and service was even worse. Server did greet us upon entering so she definitely knew we were there. I understand it can get busy and maybe she was shorthanded because by the looks of it, there was only one server. Communication goes a long way as well as serving customers in the order they arrived. Normally it wouldn't bother me especially if we got there near the same time but we had been waiting a while already and still got served last. I love to eat local but this is one place I won't be returning to.

Parking: There are a few parking spots directly in front of store but we're full despite there only being 3 occupied tables when we arrived. It is off a road that people drive super fast on even though speed limit is 45mph. It was a little sketchy driving there and parking. It just didn't feel comfortable.

Romero's makes a Vegan Green Chili that uses the acclaimed Pueblo chili. The Pueblo chili is hot and delicious and so much better than the Hatch chili. Their other food is good too especially if you smother it with their green chili. If you are not vegan, i am told the Pueblo version with chunks of pork is also good. But that will never pass my lips.
