A perfect spot to wrap up an evening, the Pueblo flatbread is a great balance of flavors, and the beer list was great.

They take too long to serve the food and they still don’t have a varied menu, but then again, they are a relatively new business. I like their food.

Ruby's is small, so you might want to make a reservation if there are going be more than 3-4 in your group. There are several café tables and a small bar inside. Outside, there is an eclectic collection of tables. Service is provided by young adults in casual clothes, while customers range from just-got-off-of-work to that was a great bike ride. They serve beer and wine if you're so inclined. The menu includes sandwiches, salads, and boards. There is a big variety of boards, but my favorite is the Thanksgiving Day board (see the picture). Prices are higher than a sandwich shop and less than a stake house.
Elaina took amazing care of us today on our first visit! I got the Call me a cab lemonade. Great wine drink ? ?My best friend got a Dirty Bannana and it was a really great coffee drink as well.

Atmosphere: 5/5Really “instagram-worthy” place. The decor and aesthetic was such a vibe and was excited to see a place like this in Pueblo.Staff: 4/5Staff was super kind and friendly but lacked wine/beer knowledge. Our waitress couldn’t pronounce the word “Bordeaux” and when the IPA on draft my husband ordered was out of stock, she offered him a sample of a different draft beer that was no where an IPA profile.Drinks: 2/5We saw reviews about people mentioning some wine and beer menus items being out of stock and boy were they right. Almost half of their selection was out of stock which was odd considering this is a wine bar. When I did finally find a wine that was in stock, it was $9.5 for a 5oz pour from a $12 twist cap bottle. A bit disappointing.Food: 3/5We ordered the pepperoni flatbread which was just okay. However the traditional bruschetta was really delicious and the best part of our meal.

Quickly becoming on of our favorite places in Pueblo. The boards are amazing. The bruschetta is fantastic as well.
