⭐️⭐️⭐️⭐️ Great Food & Atmosphere — Just Needs a Bit More Spark in Service
The Senate in Pueblo is a solid spot with a lot going for it. The food is consistently good — flavorful, well-prepared, and served in a great atmosphere that feels both stylish and laid-back. It’s the kind of place that works for a casual night out or a fun gathering with friends. The vibe is modern, and they’ve clearly put thought into the space.
That said, the service could use a little tightening up. The staff is friendly, but the speed and attentiveness can be hit or miss, especially during busy hours. It sometimes feels like you’re waiting longer than expected for drinks or check-ins.
Speaking of drinks — while the cocktail menu looks great on paper, the pours are a bit light for the price. A little more generosity in the mix would go a long way in taking the experience to the next level.
Overall, The Senate is still a place I’d recommend and return to. The potential for greatness is definitely there — with just a little more attention to service and drink value, it could easily be a 5-star destination.

Ordered pulled pork fries cheese on top taste low quality so much it kinda makes me feel sick pork was dry sauce had way too much vinegar fries were good nice atmosphere but a little dirty too willnot be back soon at best

The staff were attentive and friendly. The fried mushrooms were great. Got the Senate, fries were good. The burger was tasteless and undercooked (not a fan and don't recommend). Will not get that burger again if I was to return.
Recently attended a Christmas party here. Food, drinks, and atmosphere were good, and backroom waitstaff was excellent. However, at the end of the evening, I stood at the bar for five minutes holding my wallet trying to cash out. There was no one in line in front of me, and the bar wasn't particularly busy. The younger male bartender walked past and blatantly ignored me at least once. With two people working behind the bar, I had to wait until the older bearded bartender walked up from the back room and immediately addressed me before I could settle up. Not the end of the world or anything, but do bartenders think this inspires anything even close to a 20-25% tip? I've had a good time, I'm done, and now I'm ready to leave. I can certainly wait my turn, but I don't appreciate waiting much longer than necessary. I've had better, faster service at significantly busier bars. You can do better, Senate. This is my only reason for 4 instead of 5 stars.
I wanted to check this place out because of the historic building and location next to the Vail Hotel, so my wife and I visited on her birthday. I was impressed. Nice, casual atmosphere. The food was well-prepared with ample portions. The drink prices were quite reasonable. Kudos to the owner for not gouging on prices like so many other bar and grills in Pueblo have done. It was too cold to sit outside on the patio, but we have that on our list this coming summer. Highly recommend.

Enjoyed the senate! Stopped for a quick bite. The Senate Sandwich was delicious. Flavorful and a nice kick of flavor. Good pricing. Excellent service. They also had a few decent high end whiskies available.
