What a treat. There are four options from each good group. Vegetarian, steak, salmon, and of course, Chef's famous chicken. The bread and roasted garlic in olive oil is tremendous. As is Chef's soups and Caesar salad. A jewel.

Our party of 6 and 2 children had an exceptional dining experience. The chef took really great care of us! Everything from the appetizers,to the fresh bread with roasted garlic, each of our individual meals, and the three different desserts were fantastic!! The chicken entre was eaten by three of us and the flavor and crisp of the skin were perfection! Each of us agreed this was one of the best meals we have ever had!!!

Chef Eamonn O’Hara works his magic in the smallest kitchen imaginable, in this funky charming little jewel in Rico. Colorado. From the basket of bread & perfectly roasted garlic to the Soy Ginger glazed organic Salmon and melt in your mouth filet, this is as good as it gets. Be patient, Eamonn does everything and his staff of one moves quickly, but on a busy night sit back and enjoy the bread and garlic while you wait for perfection.

In the journey of life, you come across people who take an incredible amount of pride in their craft. Chef Eamonn O’Hara is one of them. My family and I dine at the Prospector at least three times a year, and it is an incredible experience each time. It starts with the garlic in oil with bread, followed by the corn bisque, chicken, beef filet and salmon. But, the chicken is my favorite. I have never tasted chicken so good. The wine and cocktail menu is very good, and the desserts are the perfecting ending to a great evening. The service is at a leisurely pace, so plan on about 2 1/2 to 3 hours. It’s an experience, and worth your time.

Very special food experience. Chef Eamonn is a true gourmet chef and amazingly can perform at a very high level all by himself. The results are, with a few choices at each course, you will have every item cooked and prepared with perfection.

My husband and I came here based on great reviews. It was in a very small remote town. We loved that and the fact that is was close to where we were camping. Some of the food was delicious, some not so much. We had the corn chowder soup and bread wirh roasted garlic. That was very good. I ordered the steak med well. Was well done and burnt on ends. A but disappointed in that. Husband's salmon was good. Waitress was very nice, good service. Got soup right away. Our main course didnt come for almost an hour later. Ambiance cute but could have been better for what was expected.

I have no words. I eat out a lot, I’ve lived in a lot of different places, I’ve loved abroad and several places in the US and this is the best meal I’ve ever had, hands down. This is better than Michelin star meals I’ve had. I eat vegan, and they had a whole vegan menu of options for me. The waitress was the best, so adorable, just so kind. I cannot wait to come back and bring family and friends.

What an exceptionally lovely meal, from the wonderful bread with roasted garlic, to a generous and lightly dressed salad, to the scrumptious and cooked-to-perfection chicken and mash with vegetables, all enjoyed in a simple but comfortable surrounding with gorgeous views, and warm, friendly service! Would recommend every day and twice on Sundays! We will be back with friends!

Incredible food. Chef made a vegan menu for my wife that was out of this world. We’ll be back (with friends) ASAP.
The chef worked for Wolfgang Puck years ago and that attention to detail is obvious. He was doing every job the night we were there and it was impressive to watch. Highly recommend this gem hidden away in a tiny town.

We visited this place years ago during our honeymoon in 2017, and I think about it often. It was a meal I’ll never forget!

Stayed at attached Rico Hotel. A very real sense of mining history. Comfortable and hospitable atmosphere. The proprietor, Eamonn, was outgoing and friendly. He is an outstanding chef. Only 30 minutes outside Telluride, on a mountainside, Rico is much less a tourist trap. Stay here in the evenings and visit the trailheads for hiking. Ahhh.... so much more relaxing than the hubbub tourist morass down in the valley.

Dinner is the best in Rico! Well, only place there for high end food
