What a treat. There are four options from each good group. Vegetarian, steak, salmon, and of course, Chef's famous chicken. The bread and roasted garlic in olive oil is tremendous. As is Chef's soups and Caesar salad. A jewel.
Chef Eamonn O’Hara works his magic in the smallest kitchen imaginable, in this funky charming little jewel in Rico. Colorado. From the basket of bread & perfectly roasted garlic to the Soy Ginger glazed organic Salmon and melt in your mouth filet, this is as good as it gets. Be patient, Eamonn does everything and his staff of one moves quickly, but on a busy night sit back and enjoy the bread and garlic while you wait for perfection.
In the journey of life, you come across people who take an incredible amount of pride in their craft. Chef Eamonn O’Hara is one of them. My family and I dine at the Prospector at least three times a year, and it is an incredible experience each time.
