The Adobe Inn is a restaurant and hostel located in beautiful Ridgway Colorado.I can't attest to the quality of the hostel, as I've not stayed there as a guest in probably thirty five years, but I can tell you they make a mean New Mexican meal.One of my favorite dishes is the New Mexico Beef Enchilada (although all of the enchiladas are delicious). Awesome food! The chile Rellenos were great, but the corn tamale casserole was fabulous. My Coke was only $1.50, so I don't know where the other reviewer ate...I heard this place s closing for good in Oct. :-(

Love the Adobe! Love everything on the menu! Love the service! Such a great local's hang out! Fresh, flavorful food! Great margaritas! The kahlua mousse is a must! The flour chips are amazing! I just love this place!
