Visiting from Texas, we’re well aware that the I25 corridor between Colorado Springs and Denver has a distinct lack of good Mexican food. Here in Salida, Casa Calaca broke my previous belief that Colorado and Mexican food could not coexist.
We’ve been here twice in 3 days. The food is great, the staff is great. This place will be on our “Must Visit” list from now on.
