Great food, great ambiance, enjoyed another meal at this fine establishment. Jordan the manager runs a great team and operation, a superstar, highly recommend.

Had some fantastic vegetarian sushi rolls more on the main menu. Ask for them, they are fantastic, great sushi for non- fish eaters.

We were there 12-7-26. Food was excellent although it is more set up for sharing plates. For some reason they only gave our party of nine 3 menus so it was difficult to order. The waitress more or less ignored our end of the table. When the 4 at our end needed to order food I had to waive her down. My wife's second glass of wine never came. I was going to order an additional cocktail for myself but by the time the waitress saw me waiving at her I settled for a glass of beer. In summary the food was good but the service left a sour taste.

It’s great sushi / food.
I’m just over how there aren’t any “reservations” for months but when I’m in there there are plenty of tables. Just stop with the exclusivity stuff and fill the restaurant.
It’s a great meal but nearly unparalleled in how expensive it is for a town that’s pretty expensive as is.

We sat at the sushi bar and enjoyed our experience. Atmosphere was pretty laid back for such a nice restaurant. Service was excellent, and Sushi chef Alex did a phenomenal job. Will return soon

Was very disappointed in the food. We ordered the omakase, first course was a veggie hand roll that was just raw veggies with some miso paste. Honestly not good at all, we did not finish these. In the sashimi course everything was floating in so much sauce you couldn’t even taste the fish. The salmon was in garlic oil with truffles and the garlic and truffle were so overpowering I only ate one piece of it. The sushi course was the best part, the toro was high quality and the filleted scallop was interesting. On the hot course we had the wagyu bites with foie gras, the steak had too much sauce and was way overcooked. We have heard good things about this restaurant but it was not worth the $500 we paid for two. I would expect so much more from a restaurant at this price point. Two stars because the service was good, all the staff were very attentive. Please save your money and eat elsewhere.

We love Japanese cuisine and have visited many places, most of which offered better food quality than this one.
Out of everything we ordered, only the nigiri were truly worthy — the balance between rice and fish was good, but everything else was questionable.
I wouldn’t recommend ordering the sashimi: the portion size feels as if you didn’t pay for the dish but stole it. The signature rolls are nothing special either — you can find the same quality in Japanese buffets all across America but for the value of price
And the final chord was a long woman’s hair found in the lobster taco dish.
There were no compliments from the restaurant — just an apology and removal of the item from the bill.
Our total check was around $250 without alcohol.
Would I return to Matsuhisa? No.

My wife and I sat at the bar on two occasions. Bobby looked after us in every way. Cocktails were great and the food terrific. Its definitely the place to be seen in Vail and with the service and food its hard to beat. The best part is you are not rushed in any way, if you want to stay and drink a while you can. thats the advantage of seating at the bar. Highly recommend

My wife and I love to eat at the bar and got Elaina as our bartender/server. My wife had tempura dishes that she absolutely loved (especially the avocado tempura). I went for the omakase experience with a sake pairing that was outstanding in every respect. We will return every time we visit Vail.

Matsuhisa was amazing and the service and food was spectacular. We did the Omakase experience which is chef Nobu special. Highly recommended because you get to try a little bit of everything, 9 course meal with dessert. Walked out full but not overly stuff. Drinks were great also.

Atmosphere was maybe the best part. Nothing wowed us on our anniversary dinner. We've had better sushi in Minnesota. We ordered two of their 'secret' rolls and both were good but not $25 a roll. Didn't provide special service for our anniversary. I wouldn't recommend this place nor will we be back with so many options in Vail.

Easily our favorite restaurant in the valley. The staff especially shines in the care and service. If you are new to Nobu or Matsuhisa, simply tell your server what things you like or dislike, and trust completely that they will provide a great experience.
