Sayulita in Centerbrook, Connecticut, fits neatly into the new wave of trendy “Mexican fusion” restaurants — the kind that serve up Korean beef tacos and fried chicken with lime crema instead of traditional carne asada or al pastor. It’s a stylish place, clearly aiming for that global-fusion vibe, but it’s not what I’d call a true Mexican experience.

For me, the real test begins before the entrée — with the chips and salsa. If those don’t hit the table right after you sit down, alongside a glass of water, I start to worry. At Sayulita, you’ll have to order your chips and salsa, and at $9 for a “salsa flight,” the expectation is high. The four salsas we received were colorful and well-presented, but none packed that signature punch or heat that makes good salsa memorable.

Overall, the food was fine — flavorful, nicely plated, but not the kind of meal that leaves you craving another visit next week. If you’re drawn to fusion cuisine with a Mexican accent, this might be your kind of spot. But if you’re searching for authentic Mexican comfort food and a bottomless basket of warm chips, you might leave wishing you’d gone somewhere a bit more traditional.

Normally this is a favorite, but our experience the other night was not ideal. We concluded it was our server. He was condescending, overselling and not paying attention at the end. We all ended up spending way too much on mediocre meals that night.

Food was amazing. Sayulita gives a fresh take on Mexican food that is hard to come by in New England. I couldn't try everything on the menu but from the items I did try everything was amazing. Emma was our server and she was very helpful with recommendations and asking if we needed anything. The ribs fell off the bone, the queso and guac were phenomenal, cornbread was to die for, and my burrito was a very fresh take on a burrito that I would eat again. Would recommend.
