Best shrimp fried rice I've ever had! The mango smoothie was delicious and creamy, not too sweet. All the portions were huge but we still tried a lot of items. Ceviche, tostones, maduros, and onion rings were also all exceptional.
The owner was very friendly and brought each item out as soon as it was ready so it was all fresh and hot.

This food truck was in our campground. The owner was a super nice man. The food was superb. We got food there twice. Spring rolls were perfect. We also had chicken fried rice, shrimp fried rice, and wings. Also the stir fry chicken over noodles with a sweet sauce that was really excellent. Servings are enough for 2.

Stumbled upon Rancho Pascual on a trip to Key Largo and so glad that I did! The food is AMAZING! Incredibly fresh and a depth of flavor that astounds me given that this a small little food truck. Jesus and his son Alex are both wonderful!
There are no pictures because we devoured the food-it is THAT good. The tostones rellenos are out of this world!

Fresh ingredients with great imaginative recipes result in a hidden food gem tucked away in a park. Worth the effort to search out this place, we went for the shrimp in a plantain basket , along with coconut shrimp, washed down with fresh fruit light smoothies/ juice drinks. Delicious. If you are staying at the Reefhouse it’s a 2 minute walk.

Rancho Pascual exceeded our expectations! The quaint food truck tucked on the side of a nice waterfront camp site was clean and cheerful.
The food was delicious and the portions were huge!! The coconut shrimp was incredible and the tostones rellenos and pollo saltano were some of the best we’ve had.
Pascual was the ultimate host and chef. If you are in the area this place is worth the stop!
