We flew in from California to celebrate our son’s 18th birthday and had an 8 PM reservation at Carbone, confirmed through Global Dining Amex. To our surprise, when we arrived, we were told the reservation had been moved to 6 PM — without any notice or confirmation. This completely disrupted our evening plans and our celebration.

I had specifically requested that the reservation remain as originally scheduled, so it was disappointing to learn it was changed without any communication from the restaurant. From what I’ve read, this seems to be a recurring issue, which makes the experience even more frustrating.

For a restaurant of Carbone’s caliber, I expected much better service and communication. I hope management takes this seriously so other guests don’t experience the same.

This place is a real 10/10. Amazing ambience and service. So nice inside. The best bread basket I’ve ever had with garlic bread, tomato bread and plain. The cheese too. Don’t eat too much here or you’ll be full. Cesar salad is made table salad but is pretty standard. The spicy rigatoni is a must. Simple but warm and hearty. Get a slice of cake for dessert too. Eating inside is a must if it’s your first time.

Let me say this place impressed me way too much. The service is like no other restaurant i've been to. You don't have to ask for water or nothing! They are very on top of your table. Everything they serve is fresh the food is incredible I can't even explain. Congrats to the owner of this place he/she sure did an amazing job training the employees to be this good with service. It's very hard to have excellent service at a restaurant. I highly recommend this restaurant to everyone looking at reviews right now!! GO. You won't regret it. They really care about customer's experience & high quality food to serve. I recommend reserving 2 days before we had to wait a little because we didn't make a reservation but they fit us in! We didn't mind the wait. Thank you for giving us the best experience

We want to say how much of an amazing experience we had tonight at Carbone. Our server was knowledgeable and patient as he decribed the menu and the specials in its entirety as he guided us for our first time there. Apologies we forgot his name because the food was so MIND BLOWING…from the bread to the salami to the pass around Parmesan the dinner was amazing! Thank you so much to you and your team for sweeping my lady off her feet for her bday. When we go home to Brooklyn we’ll tell everyone that the MIAMI Carbone is the one to come to!

My fiancé and I have both previously worked in the service industry, and so understand the desire to turn tables over quickly.

My 1-star review is due to being pressured to leave our table by the hostess and manager.

Shortly after receiving our entrees, we ordered additional glasses of wine. It took 15+ minutes to arrive and by the time we received the wine, we had almost finished eating.

This wasn’t a big deal- it’s a busy Friday night and things happen. We’ve both been waiters.

We passed on dessert, paid our bill, and planned on finishing our wine before leaving.

During this time we were starting to be subtly pressured by the waitstaff (frequent stops at our table), then the hostess (staring down my fiancé as she drank her wine), and finally the manager coming over to offer us “complimentary” limoncello at the bar.

It made us feel as though WE were being inconsiderate, and that we should be guzzling our $30 glasses of wine so that the restaurant could seat more people…

I made a reservation for Friday, October 17th to celebrate my wife’s birthday with a party of eight. Unfortunately, Carbone Miami fell far short of expectations especially compared to the level of excellence I’ve experienced at their New York location.

Upon arrival, we had to wait an additional 30 minutes at the bar despite having a reservation. While ordering drinks, my wife asked the bartender a simple question, and his rude and dismissive response followed by laughter from another bartender was completely unprofessional and disrespectful.

When we were finally seated, service was mediocre at best. Drinks took too long to arrive and were watered down. The server insisted we order everything at once, including appetizers and entrées, which made the entire dining experience feel rushed and impersonal. To make matters worse, my wife the birthday guest of honor had her main course placed in the center of the table for everyone to share. When I pointed out that it was her dish, the server simply split it and served it to someone else in our group.

Adding to the disappointment, the restaurant sends a text reminder about their strict dress code, yet many guests were dressed casually in T-shirts and sporty sneakers. At one point, an employee walked past our table smelling strongly of marijuana completely unacceptable for a restaurant of this supposed caliber.

Overall, Carbone Miami did not live up to its reputation. The service, atmosphere, and professionalism were nowhere near the standard set by Carbone New York. Unfortunately, this experience turned what should’ve been a special celebration into a major letdown.
