Julio delivered some of the best ceviche of my life. Citrusy, salty spicy goodness topped with red onion that was oh so satisfying. Julio ran the kitchen the floor solo and isn't just a great chef but also a phenomenal waiter. 10/10 tableside manor. He also gave me free crunchy corn.
Folks .. do yourselves a favor and skip everything else on Collins. The greasy burgers, the overpriced tacos, the pretencious fusion, the tourist traps with menus 5 pages long. This is the real deal.
