Sadly, my experience wasn't great. The hostess was very friendly and recognized from my reservation that I was celebrating a birthday. The plan was to have breakfast gazing at the beach before the spa services I booked at the same location. The server was in a pretty bad mood apparently. But even worse she was inattentive. When the coffee and eggs arrived cold and I had questions of any sort, she could not be found. I eventually asked another server to send over a manager who was very apologetic and rectified the problems the best she could. She did however try to say that my reservation had been cancelled since I wasn't there at 9 am, but I was actually 10 minutes early to my 9:30 am reservation and showed her proof of my reservation time and the confirmation messages. So it didn't make sense for that excuse to have been offered. And the experience of frustration, poor treatment and wasted time could not be reversed. So it would have been nice had she offered to take off an appetizer or make any adjustment whatsoever but she did not and it was a missed opportunity to show excellent service and win over a guest. As I paid the bill, I asked if it would be presented to the manager to confirm she had an opportunity to do that if she so desired and she did not. It was only after I paid and shared my disappointment that she deducted $10. The view was beautiful and I enjoyed the meal after the issues were corrected more than an hour after my arrival. I made sure to enjoy my birthday in spite of the lack of good service. The lady working the valet was downright rude though. I mean very rude. To be in the hospitality industry, it takes a little more concern about the guest experience than what I witnessed here today from various staff persons along the way.

From the second we walked in, the service at the front desk was not very friendly and helpful. We waited forever to be seated even though no one was there. The food was horrible and when we told them that our buratta was stale they said “the chef said it’s good” and didn’t discount it at all. It tasted rotten like I’ve never experienced before. The salmon was also hard and dry. Will never return. The pictures are also misleading and the vibes our horrible here.

There is a limited menu . The servers seem untrained. I ordered lamb chops medium rare and they came out medium well .The server said the chef said they were medium rare. Finally someone came and replaced the order . The whole thing took a long time .wasnt a present experience . The hostess refused to let us taste wine before we ordered so we did not order any.The only congenial knowledgeable person there was the bar tender at the bar.

Great lunch spot during our resort pass stay for the day! Definitely pricey, but it's an upscale hotel so this was expected. Everything tasted wonderful. James from Pensacola provided great service! We ate outside with the beautiful weather. Later in the day, we spent time at the bar inside for some mocktails. Beautiful presentation and absolutely delicious. Highly recommend!

As soon as you enter the restaurant ur met with a beautiful ambience and a very welcoming staff Neo was quick to sit me down and provide amazing knowledge to the restaurant as well as my server James built amazing conversation and provided very hospitable service providing to all my needs overall the strand made my experience at the carillon 10X better couldn’t ask for better food or service to my night

We started with an outstanding dish of fried hearts of artichoke dressed with shaved Parmesan, lemon aioli and fresh lemon. Think Cucina Povera but as made by Valentino Garavani at his villa in Rome. Whether you're paesano or glitterati, you're gonna swoon over this dish: pure perfection. The flavor palette definitely conveys coastal, more Amalfi than Miami. Deftly executed: hearts only of at least 3 large artichokes, cut into 12 sections. Light, tempura coating. Either flash fried at an exact temp or air fried. Crunchy exterior, creamy interior with distinctive oyster-like flavor. The Parmesan adds a richness to the humble thistle. Enjoy "the fries" straight up. A little lemon juice gives complements with a high note. Try the lemon aioli for a more complex bite. We quickly found a condiment pattern that carried us through our assault on the haystack of artichokes before us. The portion was very generous. But we floated through it, giddy with delight over the dish and engaged in conversation certainly as hapoy as any heard at Valentino's. Garavari is a hard act to follow, so I adjusted my expectations. But I was very happy with the freshness of both my arugula, tomato and mozzarella on ciabatta sandwich and the colorful, crispy garden salad. My companion had the Ravioli Caprese. The basil was puréed with olive oil and piped on top - there is no asparagus. We felt the dish's balance was a little heavy on the tomato. Our dessert was a passeggiata of Miami Blue. Zero calories! The dining room has a Scandinavian spa feel. Which is to say clean lines with lots of glass and earth tones. But I get it. If you're engaged in an exercise regimen and on a reduced calorie diet, it's a survival tactic to focus on the food, not the decor, and to eat it slowly. The staff warmed the room with their warmth, attention and personality. Ive attached the QR code for the menu. Foodie Alert: Tristan Brandt's Tambourine Room, 1 Michelin Star, is adjacent to the dining room. Wed, Thur and Sunday: 3 course tasting menu at 6;00; 6 course tasting menu at 7;00. Friday and Saturday: 6 course tasting menu at 8:30. The restaurant's capacity is 18, so Reservations are essential.

Perfect spa day at the Carillon today. Every staff member was authentically friendly. High quality practitioners. The massage and facial changed my life. Facilities are beautiful and clean. Will definitely be returning.

Thanks to all of the wait staff at The Strand, and particularly Jesus, who made our New Year's Eve experience special. And a special thank you to Chef Christopher who came out to meet us at our table and personally thanked us for our dining with them at The Strand. The menu was creative but 'real' and the dishes were impressively executed from the combinations of flavors to the presentation. A truly wonderful dining experience.

The staff at The Strand were courteous and eager to assist, yet their lack of training was noticeable. The dining experience was a mix of hits and misses. The burger stood out as a highlight, but the lobster benedict was disappointing. The meat was dry and lacked sufficient hollandaise sauce, suggesting it might have been left under a heat lamp for too long. A request for a side of breakfast potatoes, which seemed to be a common accompaniment in other dishes, was oddly denied by the kitchen. This refusal to accommodate a simple request, despite the availability of the item, was perplexing and suggested a lack of flexibility in customer service. The restaurant's ambiance benefits from its oceanfront location, but the furniture arrangement, what seemed to be a relic from social distancing times, felt more utilitarian than inviting. This setup, along with the empty tables despite a claimed full booking, gave the impression that the restaurant is not prioritizing revenue generation. While the attached hotel remains a favored destination, especially for its spa services, the restaurant at The Strand would benefit from enhancing both its culinary offerings, sense of hospitality and overall dining experience to match the quality expected by local patrons like ourselves. This restaurant gave my colleague food poisoning via room service in the hotel. It was so bad she had to be taken in an ambulance to the hospital and even after the doctors confirmed it was food poisoning they refused to remove the charge and the hotel and restaurant just kept placing blame on each other - for less than $100. Hotel staff was rude, restaurant food can kill you. Don't eat here, don't stay at the Carillon. I would give it ZERO stars if I was allowed. Even without food poisoning the food was bleh.
