Plain and simple: It’s fantastic ramen. I have been to Japan and it’s difficult to reach the caliber of the Ramen there but Shimuja is the best ramen in Miami and I would recommend it to anyone. Affordable, quick, large portions, perfect broth with the right amount of spice. It’s great.
I ordered the only vegetarian option - being the Key Lime ramen with tofu. It comes with an egg, so ask them to hold it if you are vegan.
The broth is not sweet - as the name suggests - but not a strong savory taste either. The highlight was the noodles - not soggy at all and very tasty. It’s full of onion and chives.
