This place is great. We had an event during a conference and Luige and team were awesome. The best daiquiris, tapas like the shrimp ceviche and guava meatballs so good. They took great care of us and our guests. I would always come back to the Rum Bar at the Caribe Royale.Dietary restrictions: Gluten Free options that are delicious

In town for a conference and just wanted to grab something in the hotel. Service was quick and courteous with excellent suggestions. Shannen made excellent suggestions! The house made trail mix is amazing!!! Rosemary along with something sweet on the warm nut mixture is soo good. I ordered the Ropa Vieja Flatbread, it was so stinking good. Had I not already ordered the spritzer I would have ordered a nice Cabernet to go with. Oh yeah the spritzer! Perfect refreshing and balanced cocktail (not too sweet and not too bitter/dry). The decor is very welcoming with a friendly and relaxed atmosphere. Feels unique and welcoming.

This bar is inside the Caribe Royale resort around the corner from check-in. It can feel a bit dark, but offers a different vibe if looking to get indoors away from the heat. They had some amazing cocktails, but prices were a bit high.

You guys are hosting the FRLA show full of restaurant industry peeps and you have a social at the rum bar and you don't have real bartenders there. We were told there was no menu-you just order what you want. I asked for a mai tai. -only rum and a float none of the actually ingredients I handed my drink right back and we left. I was told by person who made drink she did not know about anything up there that she was told to go there for day and usually works elsewhere. That is no excuse and everyone up there should have been trained. Service industry people will drink and will tip if we get quality. Why would you put your people behind the 8 ball like that. Sad!

Located inside the Caribe Royale Resort, this cocktail bar is top notch as far as hotel lobby bars go. The Rum Bar featuring Bacardi serves fun tiki drinks, classic cocktails, and Cuban-inspired bites. We went just for drinks after we had dinner at another restaurant inside the hotel, and it was the perfect nightcap. The mixologists were knowledgeable and very accommodating. If you don't know what to order, they can give you great suggestions based on your preferences or even whip ya up something custom. I loved the lounge seating and decor, and you can even play Dominoes while you sip & relax. We really enjoyed their take on a flaming Mai Tai and the Bee's Knees. You know I unashamedly asked for my drink to be served in the cute flamingo cup, haha. I love their fun mugs and if you're with a group, the communal sharing cocktails like the Scorpion Bowl look amazing!

Rum Bar is one of two hotel bars at the Caribe Royale resort, the other being the pool side bar called Callysto's. The differences between the two are: 1) Rum Bar is inside, Callysto's by the pool, duh. 2) the pool side one also has food 3) Rum Bar is open until midnight, the other closes I believe by 10. After an amazing night nearby at Andretti's Racing, most of the group we were in went back to our hotel. We didn't was to stop the fun times though. We went into Rum Bar for some drinks and to keep having fun. The place was packed! Most of it by the conference attendees. The staff was overwhelmed, and the four bar tenders were trying their best to keep the ever growing crowd hydrated. It took me 15-20 minutes to be able to order and get a drink. Thats a long time, but i cannot completely blame them due to the crowd. While waiting I got to say hello to a bunch of attendees and got complimented on the class I had given, always a plus right? In regards to the ambience, Rum bar is nice, but a typical decorated hotel bar. I did appreciate the live music though. Once we got our drinks, our group went and we drank and laughed the night away. Whether it was mocking my coworker about his bad bowling game, or him teasing me about the girl who had been blatantly flirting with me that night, or the buzzed argument two people in our group had about whether he could climb up a ledge and walk across it near the bar... yeah you know how it is. All in all great fun! Place stayed open until 1 am, well past quitting time. As i made my way back to my hotel room, I realized i had a long day ahead of me... packing, end of conference, checkout and two flight. Did i regret it? Nope! I do appreciate the bar being open so long! It helped end the night/start the morning on the right note!
