I have eaten all over the world and this experience blew me out of the water. In Tallahassee. Never would have thought. The bartender at our hotel recommended and the place didn’t disappoint. Very understated when you arrive. Walk in to a lively bar. Friendly service. Waitress Sydnee was delightful. Opted for chefs tasting menu as I find that’s the way to get what the chef would want to serve most. After that, done. Food was OUTSTANDING. Japanese octopus hand pie with wasabi cream and Japanese pickles, next was a fish and coconut stew, then a braised duck sort taco , elk tenderloin with mushroom risotto and finally, a guava hand pie with goat cheese ice cream and basil streusel. Unbelievable. Really sad this is a seasonal menu, I was just visiting and may never taste this again. Will be back here for sure ANY TIME I’m in Tallahassee. Please. If you enjoy food. Give this place a try. Oh. And has a great wine list. Barbara d’alba with the meal after a great Boulevardier. Cheers.

We had an outstanding experience at The Huntsman from start to finish.
The cocktail program alone is worth a visit. The Persistent Honeybee was beautifully balanced — smooth, aromatic, and thoughtfully crafted. The chai-infused gin paired perfectly with the honey and citrus and set the tone for the entire meal.
We started with the crab cakes, and they were exceptional. Perfectly cooked with great texture and flavor — easily some of the best crab cakes we’ve ever had. Truly a standout dish.
For the main course, the 8oz ribeye spinalis was phenomenal. Cooked exactly as requested, incredibly tender, and full of rich flavor. This is a steak that speaks for itself without needing anything extra.
The wild game meatloaf was equally impressive — elevated comfort food done right. Savory, well-balanced, and clearly prepared with care.
From the food to the pacing to the service, everything felt intentional and well executed. The staff was attentive without being intrusive, and the overall atmosphere was warm and refined.
This was easily one of the best dining experiences we’ve had in Tallahassee. High-quality ingredients, excellent execution, and a thoughtfully curated menu. We will absolutely be back.

Delicious vegetarian options and the service was excellent, we will definitely be back and ask for Luis!
Everything we had was cooked perfectly. Portions are not skimpy and the flavor combinations were spot on. Only downside - no room for dessert! Next visit will be just be appetizers and dessert, so we can try more variety.

Luis our wonderful server was so knowledgeable and passionate in his role. His enthusiasm is charming and I truly thank him and the kitchen staff for a wonderful night.

If you’re not being served by Payne, you’re simply not experiencing this restaurant correctly. This man didn’t just serve us, he elevated our entire existence. Waters refilled before we even realized we were thirsty. Recommendations so elite they might as well be Michelin-certified. Service smoother than a billionaire’s private jet.
Payne is the LeBron James of hospitality, the Gordon Ramsay of charm, and the Tom Brady of perfect timing. We came in hungry and left spiritually fulfilled.
Do yourself a favor: request Payne and watch your meal turn into a life-changing event.
