So, while pondering my life and my appetite, I searched Tallahassee for a restaurant that could satisfy my urge for great food and great service! This in turn led me a restaurant that I heard about many times called The Huntsman! The Huntsman, from my understanding was a restaurant that specialized in wild game dishes that blended different cooking styles and recipes from around the world. I walked in not knowing what to expect (or if I would be able to find a table). I was greeted promptly and politely by a very nice host! I told her I would like to dine in if there was a spot. She led me to the bar and told me my server/bartender would take great care of me! Woody, my bartender was amazing! He was friendly and knowledgeable, always looking for an opportunity to talk about how amazing the food and drinks were. With this knowledge, I did what I normally do in a restaurant that I never been before—I let my server pick my meal. He chose the Crispy Duck Cassoulet and I went with his suggestion. This dish was combination of duck stock stewed white beans, wild boar bacon lardons, wild game sausage and brown butter breadcrumbs! I cannot tell you in words how amazing that dish was! It was so good, in fact, that I sat in silence for the first couple of moments as I was briefly transported to a cabin in the woods cooking my own duck stew. As I came back to the current moment, I heard the couple beside me ask what I had gotten and that it looked delicious! For dessert, I got a shortbread cake! The dish reminded me of a tiramisu with a slightly more orange cream flavor. It was outstanding! This was all paired with a Duck Cove Pinot Noir from Oregon! I can say, without a doubt, that the food, service and atmosphere was outstanding! I give it 5 out of 5 bones! Thanks for an amazing experience!

Wow!!! The food was AMAZING! Everything we tried was so delicious! The crafted dishes are made with high-quality ingredients. The service was top-notch, Andrew was very knowledgeable and made great recommendations. He made our experience so much better with the care and attention to detail that he provided. As for the our dinner the steak was soft and had so much flavor! The lobster was cooked perfectly! The drinks had a good amount of alcohol that we ordered a second round. The desert was so flavorful! Recommend this restaurant to anyone looking for an amazing culinary experience with a great ambiance! Would definitely return on our next visit to Tallahassee.

The Huntsman has one of the most unique and impressive restaurants I have ever been to. Everything we ordered was exquisite. If you aren’t into trying unique meats like antelope or wild boar, don’t let that stop you from eating here! They have more traditional meat options like beef, pork, fish, and multiple vegetarian/vegan options as well.

A must try for me would be the antelope steak. The meat is tender and flavorful. The menu changes seasonally but the chef paired the meat with sides that made the perfect plate. The cocktails were also spectacular. I highly recommend this restaurant to anyone.

The atmosphere was warm and inviting, perfect for unwinding after a long day. The food was exceptional, with thoughtfully crafted dishes that showcased fresh, high-quality ingredients. Being the carnivore and fan of game meat that I am, many people had recommended that I try The Huntsman… I can understand why now. The food was expertly prepared. So many restaurants rely on certain base proteins and just change the sauce and accompanying ingredients to make it seem like there’s diversity, but it’s really just the same gift in different wrapping paper. The food at The Huntsman was an individual adventure and journey of its own. Each dish was a completely different experience than the last. There were no repeating sauces or seasonings in each dish. Everything was deliciously executed and distinctly unique. I appreciate the care and consideration that went into the thought and deliver of each course.

My experience at the restaurant was below satisfactory overall. To begin with, the service was exceptionally attentive. We had to wait for our table, and while the cocktails were decent, they did not leave a lasting impression. For appetizers, we ordered the tempura octopus and bone marrow. The octopus was fair to good, earning a rating of 3 to 3.5 stars, but it wasn't something I felt compelled to crave. Unfortunately, the bone marrow was quite disappointing; it had an unusual odor. Having had previous experiences with marrow, I have a basis for comparison, and this was not favorable. When the waiter inquired about my thoughts, I provided candid feedback, but he interrupted me mid-sentence, seemingly to redirect the conversation. I believe he misconstrued my comments as complaints, whereas I simply intended to share my opinion without seeking a discount. This led to a shift in the atmosphere for the rest of the meal.

As for my main course, I ordered the duck cassoulet, which was overly salty, and the beans were undercooked. My boyfriend chose the antelope, which had a decent flavor but was rather chewy. The standout of the evening was the broccolini, although there wasn't enough of it to warrant a return visit. On a positive note, both the bartender and the host provided excellent service, earning five stars from me. The waiter was attentive until our conversation about my feedback made him visibly uncomfortable, which was unexpected.
