JERK CHICKEN
Jerk is a style of cooking native to Jamaica, in which meat is dry-rubbed or wet marinated with a hot spice mixture called Jamaican jerk spice. Chicken is coated in a seasoning mixture dominated by allspice, thyme and fiery scotch bonnet peppers, then grilled.

BROWN STEW CHICKEN
Brown stew chicken is a Jamaican recipe that encompasses deeply marinated and stewed chicken parts. The chicken braises in a ton of spices, herbs, veggies, and more. The chicken tenderizes and soaks in all the juices its cooked in until it literally falls off the bone. Magnificent taste!
CURRY GOAT
Calling on the east Indian side of Jamaican heritage. Goat meat seasoned with scallion, garlic, ginger, thyme, onions, scotch bonnet pepper and curry powder, which is then slowly cooked until the meat is tender and the sauce is thick and delicious.

Jamaican Oxtail Stew – out-of-this-world delicious oxtail stew braised with butter beans in a flavorful deep gravy spiced up primarily with allspice, thyme, paprika, Scotch bonnet pepper and browning sauce. It's fall-off-the-bone tender.
