I have been completely obsessed with this bakery for years. It's one of my very favorite places to be. I love walking my family's dog down, picking up a caramelized croissant or something else delicious, and sitting out on the patio with a coffee and the New York Times games on my phone, a book, or the paper. I basically won't eat bread that isn't from here. As a lifelong sourdough aficionado, Independent's sourdough is among the very best I've had, and I've been to a lot of bakeries around the world, including Copenhagen, Paris, etc. Get there early for a full bake case to choose from and go back again and again to try everything. Love all the staff too, they're my buds now.

I’m just home from a 40 minute round trip and a 15 minute wait in an outside line at 32 degrees having not received the loaf of spelt bread I ordered and paid for yesterday. I received the disappointing news that, while they charged me for the bread, they did not have my order at all. I really like their spelt but it is only available on Saturday mornings. There was no offer to remedy the situation in real time. The bakery owes me a refund for the cost of the loaf and I am curious how they are going to respond to having wasted my time (time is a currency and leisure time has a high value) as a result of their error. Again, their spelt bread is flavorful, has a moderately dense but not doughy texture and, holds both for enough time to enjoy the whole loaf. Wonder how they will contact me as the staff member waiting on me took no information from me?

The food is good, but the service is not friendly. When I asked for a sandwich while ordering, the female staff member let out a loud sigh and asked which sandwich I meant, saying there were many kinds. Her attitude felt unprofessional and not appropriate for customer service.

Last week I stopped by IBC in search of some good homemade Rye bread for our annual Corned Beef St. Patrick’s Day meal. The cashier recommended Sourdough Rye which is only made on SAT. I ordered 2 loaves for P/UP on SAT afternoon but I got tied up and did not realize they were open on SUN. So when I stopped in on TUES Peyton offered for me to pick out 2 loaves to replace the 2 loaves that I never received. Now that is excellent Customer Service! IBC will now be my go to Bakery. Check them out. Wonderful selection and they even have some great special roast coffee and other specialty items. Thx to Peyton and the entire IBC Team.
