(Late review from September - October 2022) The absolute BEST ramen ever especially from a food truck! I tried the egg noodle ramen with pork belly. It was AMAZING. Such a yummy meal for lunch. The prices are worth it for a tasty bowl of fresh ramen. The customer service was welcoming and helpful with recommendations. The ambience is in a food truck venue area with other nearby food trucks to get snacks, different food cuisines, and beverages. A MUST-STOP food truck stop for lunch while in Maui.

We love ramen and get it all the time when we're at home (CA, oc). Noodles were cooked medium firm. Pork belly was awesome. Crispy/charred on one side. They were cut in cubes which I've never had and I loved it.

We ordered the vegetarian ramen - spicy garlic and the miso ramen. Couldn't complain, both were delicious and full of veggies/tofu. They have options for udon/egg noodles(doesn't contain egg).

Our VERY FIRST stop in Maui for our honeymoon after leaving the airport (it's 5 minutes away and there are several food trucks in the area, worth the stop!!) and after reading all the Maui blogs in prep for this trip, "North Shore Noodle Bar" was mentioned enough times to peak our interest, and the (new!!) hubby and I were very pleased with this choice.Create Your Own-style ramen bowls - we went with: udon noodles, miso broth, pork belly, and poached egg, green onion, kimchi, mushrooms, roasted garlic and corn for toppings!!In the words of my husband, "There is not a single flavor profile in this bowl that I don't love." It was so satisfying, and filling! We split the bowl and probably slurped it down in 5 minutes flat (possibly less).Kimchi was a highlight for me (delicious heat), and the pork belly was cooked to perfection (with an awesome crispy sear)! DEFINITELY RECOMMENDED!!

Loved the experience from this little Noodle bar and since it is right next to Costco, it is a great place to grab food before shopping for all the food for the Maui adventure. I loved the presentation and the taste is spectacular!! Will definitely be back for more!

My wife and I arrived at the food truck park around closing time. All the trucks had packed up except for the North Shore Noodle Company. A small line of desperate travelers had gathered, and Travis stayed open an hour after closing to supply them with bowls of ramen. Travis could have been forgiven for telling us all to b***** off. Instead, he cracked jokes with each customer and flashed his trademark smile. The next day, my wife and I returned for another bowl after grocery shopping (yes, the ramen was that good!). Travis remembered my name and remarked that he'd barely noticed the time the previous evening, for he was too absorbed in serving his customers. Travis is not just a fantastic chef; he is an amazing human as well. Playful, funny and generous with time and spirit. Stop by when you're in the area. You won't regret it!
