Unbelievable. This was hands down the best meal we have ever had here on Maui. We are long time residents (30plus years) and have tried most restaurants. For some reason we did not discover NyloS until now. Just WOW. We literally clapped after courses. After dining all over the world including many Michelin star restaurants-NyloS is a must if you are visiting or have a special occasion. We've already booked our next reservation and are excited to bring family, friends and clients for special dining experiences. How is this a hidden secret? We are telling everyone we know. Huge mahalo to chef Jeremy and his wife Paulina. Outstanding team 🤍

I've been to many restaurants of this sort over the years. This one in particular rates high in my list. The husband and wife duo put a personal touch to the experience. The food was also excellent. I'm excited to try it again next time I visit the area.

This is our third time at Nylos and it is magical every time. The food is amazing, but the experience of three hours of enjoying the moment is even better.

Nylos is a beautiful tiny restaurant which only seats about 14 people. The food is amazing, and the presentation absolutely stunning! The chef his wife are incredibly kind and friendly. I couldn't think of a better place to celebrate my birthday!

A once in a lifetime dining experience! If you've got some cash to burn this is the place to do it. Worth the drive to Paia from the resort we stayed at in Kaanapali. Seriously the best bite of waygu beef I've ever had. This husband/wife team treat you like family while delivering a top notch culinary experience. And their wine parings...literal perfection. Can't say enough good things about this place. They are doing something very special on Maui.

I literally cannot say enough about what a wonderful experience this was. If NyloS was in another state it would have a Michelin Star already. The crafting of each item was so meticulous. I simply cannot say enough about what a wonderful time we had. Such an amazing couple too. Husband and wife working together for a seamless experience. We will definitely be back on our next visit to Maui.

Among the handful of 2- and 3-star Michelin-level dinners I’ve had the privilege of experiencing, NyloS stands among the very best. While it may not (yet) carry an official Michelin rating, the quality, creativity, and execution of the dishes are, from my perspective, on par with places like Per Se.

What truly sets NyloS apart, though, is “soul.”Chef Solyn and his gracious wife Paulina made us feel like part of their family, turning my wife’s birthday into a uniquely personal celebration. Each course was a work of art — thoughtful, expressive, and balanced.

This was hands down one of the highlights of our time in Maui. We can’t wait to return! Until then, I sincerely hope major establishments take note of this hidden gem.

I wish there was a way to give 100 stars. This place, food, service and everything is beyond great. From the first bite to the last everything was spot on 110%. If you have tried everything else and want to elevate above and beyond you need to go to this place. Make your reservation NOW !!!!!

Everything was excellent! Chef Jeremy is a culinary genius. His wife Paulina a true delight and presented each course wonderfully. Love that they use locally sourced ingredients. A unique dining experience that must be discovered.

AMAZING AMAZING AMAZING food. Dined on 03/12/25. Often multi-course tasting menus leave me with a few “meh's”.... Not this one.... Every dish was well curated and executed. There were highlights for sure (Aloun Farms corn) and the exquisitely prepared lamb...but overall the entire meal was great. My only suggestion would be to try to improve upon the pacing of the meal. Chef Jeremy and his wife Pauline are the only staff (save for one kitchen helper I saw). This limited front of house staff resulted in long waits between courses while service was executed two tables at a time - we frequently heard the course being described at other tables two or three times before we got our own serving of that course. I can appreciate the need to keep costs down with limited staffing - but efficiency also plays into the overall experience. Our first course was not served until 35 minutes into the 5:00 seating. It was delicious - don't get me wrong - but sitting for 30 minutes before the first course set the stage for what was to come later, albeit slowly. I would dine here again as I feel the quality of the food deserves it. In reality, it is one of the few tasting menu's I've had that I can honestly say it's worth the price.

What a fun adventure. Each course was meticulously crafted and plated beautifully. The flavors on every course danced on the palate. I don't usually care for caviar but the juxtaposition with different egg pairings were decadent. The focaccia melted in your mouth. The shrimp were very lightly tempura coated and very very tasty. The wagu beef was soft and flavorful and the lamb chop cooked perfectly with a charred smokiness. The wine selections for the pairing were spot on. Paulina is the perfect hostess and Jeremy dotes on every plate. It was definitely an anniversary to remember. And yes, it's pricey but we are glad we took the plunge.

You can clearly tell that Jeremy and Paulina Solyn are dedicated to providing guests with a wonderful experience. This is an intimate dining experience accommodating up to 14 people per seating. While Jeremy is busy preparing the meal, Paulina is attending to guests and both will finish plating and serve when the course is ready to go out. The ingredients are sourced thoughtfully and they have repeat customers which at this price point says it all - you want to support their endeavors. Usually a fan of wine pairings but skipped it as the Maui sun takes a toll but enjoyed the sparking wine (included) and opted for a red with the later courses. Do expect to spend several hours here especially if they are it doing the later seating. This is not an experience to be rushed so if you are impatient then not the place for you but you're in Maui so savor and enjoy!

There is really no way to accurately describe how special this restaurant is. It is an experience for all of the senses. The atmosphere is so intimate and a little quirky but I immediately fell in love with it. The food is so whimsical and inventive and pushes boundaries. It's absolutely delicious and beautiful. The wine pairings were spot on. The husband and wife team have really created something unlike anything else I've experienced. It's a true labor of love that is evident in all of the details if you pay attention.

Absolutely one of the best dining experiences we have ever had. Each dish was exceptionally creative and paired with an outstanding wine. The meal was thoughtfully curated from the start to finish, embracing local ingredients with refined preparations. An excellent balance of perfected, traditional methods and molecular gastronomy. Plating and service was equally outstanding, with no detail missed. Truly exceptional from start to finish, and well worth the investment.
