The evening was nothing short of spectacular. Jeremy and Paulina were inviting and made us feel welcome, like we were dining at their home. The space is small and intimate and the food was a gastronomic marvel. Each course was divine, the flavors a symphony to my palate inviting me to savor each and every bite. The wine pairings were a completely other level. Sheer genius, the flavors married so well and accentuated each other perfectly. This was one of the best meals I've ever eaten and would recommend to anyone looking for a unique, extraordinary and unforgettable culinary experience.

Nylos is a real find for folks who are foodies! They dont miss a beat when it comes to creative, colorful exciting food preparation. every selection was well thought out and prepared. I love to be surprised and we were with bubbles, gold and silver leaf, new preparations ..and local sourcing. The wine selection was very well crafted to match the courses served.. Just a beautiful experience.

Intimate environment, immaculate food.

Decedent across the menu. From lobster and caviar to Wagyu and foie gras; and everything is prepared to perfection and has a purpose. The plating is gorgeous and the gastronomy effects were beautiful and interesting.

Not only was the food top notch, the service was excellent as well. We learned a lot about the sugar industry of Hawaii and about the ingredients used in our dishes.

We will definitely plan a return trip on the our next visit to Maui.

The Michelin starred chef-proprietor and his gorgeous wife make a smashing dining experience at this hidden gem in Paia, Yes its expensive, but for a special occasion why not indulge yourself in an inventive world class tasting menu? Irs as good as any in NYC, LA or Paris-- full of diverse and subtle flavors, presented in a warm inviting space with only 14 seats. Life is short. The wine list is excellent and the champagne paired with the amuse bouche is delightful. Go for it, you won't be disappointed.

This is a Michelin-star level experience. The prix fixe is inventive, dynamic, and highly intentional from course to course, yet they were able to accommodate an allergy which has been a chore at other fine dining locations in the past. The chef himself messaged us on Open Table to ask details about the allergy. The atmosphere is intimate, with only 14 chairs in the cozy and characterful dining space. Each guest can easily viewchef Solyn prepare each dish. The experience of a husband and wife duo preparing and serving the entire meal on their own was a unique experience in this sphere of dining, and the service was impeccable and personal. My personal favorite was the lobster ceviche, but every dish made me feel a brand new emotion and sensation that reminded me that there are artists actively pursuing excellence.

nyloS delivered an exceptional prix fixe menu with the finest of ingredients, upscale preparation and warm atmosphere. Chef Jeremy's passion for creating unique, fine dining, meticulously composed cuisine is perfectly paired with wife Paulina's engaging, kind and perceptive front of house skills. Together they delivered a complete package, and we enjoyed the experience and ambience as much as intricate menu with detailed, house-made components involving multi-sensory elements such as smoke, carbonation, fermentation, powder and edible metals. From silver to gold, lemon smoke to lemon lollipops, the meal was a complete journey and we were happily along for the ride. Standouts for us were the grilled & chilled lobster and avocado, multiple caviar "garnishes", crisped to perfection pork belly, stunning melt-in-your-mouth wagyu with mustard sauce, and the sweet and savory twice baked purple potato. We were beyond satisfied with our meal and dining experience and departed with Aloha and full bellies. This is a can't miss experience on Maui and we will back!

My wife took me here for my birthday and it did not disappoint. Everything was 1st class, from the service, atmosphere, music and especially the food! I was ready for a meal of exceptional quality and got not only quality, but quantity. Beautifully plated and fun. Definitely the best dining experience of my life.

Amazing experience. You can find some fine dining on Maui but 99% are going to be in some hotel or resort. This couple runs the whole place by themselves and produce super high end food in a small local restaurant. It's an experience not to be missed if you are looking for that special dinner on Maui
