Some of the best, freshest sushi I've had. Rivals places I've visited in Japan, all while being very reasonable in price.

We celebrated my wifes birthday and we're glad we did. Sushi by Bou is hidden inside of the Emily Hotel and everything was on point. The vibes, service, food and price was 10/10. Our Omakase Chef was Sebastian and he was excellent. He would converse with us if we had questions or comments. The sushi selection was top notch. It was our first time with an Omakase experience and my wife and I were already planning on the next visit before dinner was even over. For a party of 3 our bill was $451.09 with drinks and ala carte sushi at the end. The $70 omakase was 100% worth the price. You don't have to order ala carte at the end. The big Mac ala carte sushi is a one and done type deal. It's good but not something you would order every time you go. You get what you pay for here. You pay a premium for delicious sushi, excellent service and an awesome vibe. Great for date night.

Great sushi if you're willing to be rushed through eating. I would avoid if you're looking to enjoy your meal and conversation with guests.

The team here is truly the best. My friends and I were welcomed with the best energy, music, and drinks when we arrived. We loved learning about each course chef prepared and trying new things. We're always taken care of when we visit and will definitely be back again soon!

Amazing experience. Grabbed an early dinner for Restaurant Week. It was an amazing experience, from the hostess to our chef!

I’ve been looking for a really good sushi spot in Downtown Chicago, and Ryo Sushi checked every box. I’ve tried a few places in the area, but this one has been the best so far. The sushi was incredibly fresh, well made, and full of flavor. Friendly, attentive staff and great vibes. Highly recommended 💯

First time here and I totally agree with the reviews. My husband and I ordered the Chicago roll plus two others, and everything was delicious. The service was great and the sushi was amazing. Definitely a place worth visiting. 100% recommended!

We enjoyed everything we got here. We started with the Harumaki (spring rolls) - very good, perfectly oily but still somewhat light since they have a vegetable filling.

For sushi we got a Philadelphia roll (with fresh salmon instead of smoked), a salmon roll, and a shrimp tempura roll. Salmon quality was great. Shrimp tempura roll was difficult to manage with how large each piece was, but it tasted very good.

How fun! Actually seriously good nigiri with the most helpful and pleasant staff. This is a fun omakase that doesn't take itself too seriously and delivers a high quality product. We will be back.

Enjoyed the whole experience! I think the price was fairly reasonable for what we got. My favorites were the personal picks from the chef!! The staff was really fun and made the whole experience amazing.

Wow. It's simply impossible that fine dining could be this fantastic. Tashon, Jens, and Jackie rolled out the red carpet so amazingly, you would have thought our last name was Bou. Sebastian behind the counter was simply breathtaking. We've had omakase at some of the world's leading places in Miami, in Seattle, in NYC, and Tokyo, led by folks who were trained by one of the global icons, and I have to say that Sebastian's ability to create absolutely new and inventive tastes and flavors - while adhering to simple and gorgeous presentations - was simply unmatched. While Sebastian was working his magic, the rest of the team was working hard to make sure every other part of the experience was simply flawless. Water? Always full. Cocktails? We were always asked about how we enjoyed each one well before each was empty, by the expert mixologist who was able to explain the difference between how American mint and Japanese mint can enhance the flavor of certain beverages. Plates? Cleared instantly. Feedback welcomed by the chef? Absolutely. The energy level is not “watch me make your next item while the brightly lit room cowers in awkward silence” - like so many high end omakase spots. This experience is more like “Do you want to be sad when your dinner ends because you don't know when you're ever going to feel this happy with a meal?” There's so much more I could say, including how the effective background evening vibes by Utah's legendary DJ Ta-Salmon made us want to sing each employee's praises. As MJB once said, it truly feels like this team is a family, and it was a Family Affair. Concluding, let me say what MJB would - when you go to Sushi by Bou at Fulton Market - Leave your stress (and hunger) at the door, so when you step inside, you'll see what's in store. Sigh... I know every review is supposed to have one “constructive critique”, but we can't find a single flaw in our entire experience. Thank you, Sushi by Bao team!
