Stetsons Modern Steak + Sushi

Wouldn't recommend for steak. Sushi is great though. Service attentive, but average as order was messed up despite needing to be continuously repeated.

They take too long to take a steak order. The nigiri sushi appetizers were good and on time, but we had to wait 50 minutes for the main course.

The restaurant boasts a great ambience and an impressive menu selection, but unfortunately, the service and food fell short of expectations. It took an unreasonably long time for the waiter to acknowledge me, setting the tone for the evening. I started with the grilled octopus, which was disappointingly cold—something that should be served hot straight off the grill. For my main course, I ordered the sea bass, which was advertised as being accompanied by butternut squash. When I inquired about it, the waiter insisted the dish did not come with squash. After pressing the issue, he checked with the kitchen and returned to apologize, stating that the meal has never actually included squash—despite it being listed on the menu. To their credit, they did prepare some squash for me, but this kind of inconsistency should not happen, especially at the price point of their dishes. Overall, while the atmosphere and menu offerings are appealing, the restaurant needs to ensure its service and food quality align with the expectations it sets.

Absolutely first rate sushi, and I eat it in New York City and DC fairly often. I don't know how they got it this fresh, but they did. And at a steakhouse no less! A pricey place, but very comfortable setting and atmosphere, and excellent service without being at all stuffy. Next time I'm in that neighborhood, I will eat there for sure. Highly recommended.

During a recent family visit to Chicago, we had the pleasure of dining at Stetsons Modern Steak & Sushi, located within the Hyatt Regency. We enjoyed two visits, and both were exceptional experiences!

The highlight of our evenings was the impeccable service provided by Jesus, who was attentive, warm, and ensured our meals were perfect from start to finish. Both the sushi and steak were prepared to perfection, with every dish being fresh and flavorful.

The combination of excellent service and outstanding food made each visit truly memorable. We highly recommend this restaurant and look forward to returning on our next trip to Chicago!

I sat at the Sushi Bar, and the sushi was excellent. I have sushi in cities across the country ordering some of the same item and the flavors here were exceptional. The sushi chefs are masters of their trade. It was so good on Monday night, 9/23, that I went back on Tuesday night, 9/24. I would highly recommend Stetsons! Steve

Great service from Hussain when we were here as a family, he really took great care of keeping the kids happy. Steak and Sushi were great, service was prompt, and overall pace of the meal was good. Restaurant was a little cold (AC) but otherwise a good environment.

Disappointed in flavor of my overcooked fillet steak. Mashed potatoes came luke warm. Light above table was flickering off and on. Asked waitress if something could be done about it and she ignored me.

Very good. Steaks were cooked correctly to order. But unfortunately not as flavorful as I hoped. Still an A- on the steak. Mash potatoes and asparagus were excellent. The chimichurri sauce was bland.
Sushi was excellent , I hate to say how surprisingly fresh it was for how far away any ocean is. (Overnight shipping is the real hero here.)
Hard to get there because of some road construction issues , cab driver had to break some laws. Overall it was worth it.

Limited menu. Service was friendly but lacking in frequency and bandwidth. Convenience for hotel guests (located in the Hyatt Regency) is the main attribute of this restaurant. Not a place for the best steak in Chicago or for a special event.

Based of off the reviews, I had an expectation that this place would above average food with a good atmosphere. I was wrong. Our calamari was salty and chewy, the steak was undercooked as to our, " well done." request. We ordered a California roll and sushi, the sushi was fair, the California roll was terrible! The rice was dry, and each piece fell apart as I tried to pick it up. The service was slow and very generic. There were several friendly and hard working. people cleaning the tables etc. Take my advice and skip this place.

I was happy with them. Their earlier evening dinner sushi meals were good. For context, I spent less with them than I did at a breakfast buffet at the hotel the next morning.
