This place is always a winner. Our favorite thing is to sit and the bar and share plates - unfortunately, I think it's a lot of people's favorite things to do, as the bar is often as packed as the tables. The bar staff is amazing, and the cocktail menu and bourbon selection top notch. The food is upscale pub fare, but not fussy or pretentious - just REALLY good versions of classics with inventive twists. If I had a complaint, it's that it gets loud. The long narrow space seems to amplify the noise, so you have to raise your voice to be heard, and thus contributing to the din.

I'm not sure what a modern American bistro is. One definition is a neighborhood restaurant with community ties and a warm, cozy, inviting atmosphere. Food? A mix of French and Italian with an occasional foray into Asia in Latin cuisines. Get it? Maize & Mash offers such savvy items as home-made smoked brisket chili and Tempura Squash Burrata and Short Rib grilled cheese. But it makes its bones with a vibrant whiskey bar, a blend of southern cuisine and a curated selection of refined whiskeys, something that I am totally unfamiliar with. Open from noon to 9 on Sunday and Monday, noon to 10 on Tuesday, Wednesday and Thursday and noon to 11 on Friday and Saturday, Maize & Mash at 430 North Main Street in west suburban Glen Ellyn is a hit in an affluent community that once was starved for inventive and creative and upscale restaurants. I know. I once lived there. To get acquainted, I started with brie curls with breaded brie and apricot pepper jelly and a salmon salad with grilled herb crusted salmon, chopped bacon, candied walnuts, sliced grilled pear, shaved parmesan and mixed greens. For a main course, I couldn't resist a turkey sandwich with house smoked turkey breast, bacon, avocado, melted brie and raspberry mustard and a Maize & Mash burger with bacon, caramelized onion, gruyere cheese, sunny egg and dill pickle aioli.

Stopped in on a Tuesday for a burger, and so glad I did. Had the “maize and mash” burger and it was perfect— cooked perfectly medium-rare (as I had ordered), toppings were perfect including the runny fried egg on top, bun was light and not too chewy— just a great burger. Fries were excellent. Had a draft beer, a stout, to wash it all down. Service was fast and friendly. Highly recommend!

What a delightful find! We were looking for a place to have an early dinner in the area and Maize + Mash looked intriguing. I had the Shor Rib grilled cheese with caramelized onions and Grueryere cheese and it was amazing. So flavorful and well balanced! The touch of horseradish mayo added just enough of a little kick. The elote side dish was equally delicious. Definitely a hidden gem!

We decided to stop into maze and mash tonight where we sat at the bar and had good drinks and food. We went to watch the bears based on their Instagram story advertisement. The Brewers Dodgers game wasn't on even though the Bears were which is why we went there for their advertised dollar wings and $10 old fashioneds. They graciously put the playoff game and everything was great until we were asked to leave for the second time so they could close up shop in the bottom of the 9th with bases loaded. It was late in the fourth quarter of the bears game as well. We missed the end of both games and had to watch the Dodgers Brewers while walking to our car up the street on our cell phone. We missed the bears walk off field goal for the win on our way home. So - if you really want wings and to watch the bears game on Sunday or Monday don't bother going to maze and mash where you'll be asked to leave and not get to see the end of our local team pulling out a big win or the last batter in the bottom of the 9th in the NLCS Playoffs! Again good food and service nice ladies behind the bar but I would rather have 20$ drinks and full priced wings and see the very end of the games advertised on their Instagram story. I'm not even a huge sports guys but come on...

This is the first time I have been to the restaurant. The special of the day was $1 wings but you had to order a minimum of four. The burger was surprisingly good. Cooked well and tasty. The salmon salad was very good. The server forgot to bring refills that we asked for on our drinks. He was a little absent. The atmosphere was good. a little loud but it's a bar......I would go back again.

Seasonal menu, bar program offers specialty products, housemade prepared ingredients, tinctures, infusions, etc.

One guest order the Shwarma Bowl with tender chicken sliced across couscous, diced cucumber, with silky hummus drizzled. The tuna poke was served with triangular wonton chips that have a lined texture offering more service grip to scoop up all the accoutrements and fresh tuna pieces.
The bartender, server and team present were friendly and anticipating our every need. Thank you for a wonderful night out.

Firstly, the fried chicken bao was absolutely amazing. Would definitely recommend ordering that as an appetizer. The arancini's were a close runner up and also very good. The shawarma bowl was a very good choice for dinner. Very filling and great flavor. Will be returning here in the near future.

Love this place. Love the feel of this place. Love the beautiful bar. Even love their gorgeous unique silverware. Or should I say black wear. Order the cauliflower kung pao. Oh my gosh. I'm never ordering regular Kung Pao again. The rice at the bottom of the dish was awesome. Even putting a little bit more in there would be wonderful. The soup however was another story. Ordered the soup of the day and it was tepid. At best. If it is stored that way then I'm sure that raises concerns for salmonella and such. So please raise the temperature on your soups you guys.
