Taittinger Brut La Française is a blend of Chardonnay, Pinot Noir and Pinot Meunier wines from at least 35 villages. The high proportion of Chardonnay (40%) is unique among fine nonvintage Champagnes. The presses are located in the vineyard for immediate pressing of the fruit after the manual harvest, and the resulting must is cold fermented under temperature-controlled conditions. After resting until the end of winter, the wine is blended, and then the final cuvée undergoes a second fermentation in the bottle in Taittinger's cool cellars. The aging of Brut La Française on the lees for almost 4 years more than doubles the legal minimum of 15 months. This extra time in the cellars allows the wine to reach the peak of aromatic maturity, and the result is a delicately balanced Champagne, known for its consistently excellent quality.

Blanc de Blancs (white from white), made from Chardonnay, is the counterpart to the Blanc de Noirs (white from black), made from Pinot Noir. Blanc de Blancs was the first wine Schramsberg produced in 1965 and was America's first commercially produced Chardonnay-based brut sparkling wine. Schramsberg Blanc de Blancs gained international recognition in 1972 when then President Nixon served the wine at the historic "Toast to Peace" in Beijing, China. The Schramsberg style of Blanc de Blancs is dry and crisp. Small lots of malolactic- and barrel-fermented wines are added for complexity. The wine is aged on the yeast lees in the bottle for almost two years prior to disgorgement. With its vibrant, fruitful and crisp nature, this sparkling wine will maintain its freshness, structure and refined finish for many years, even decades, following its initial release.

Our Roots of Ruin Gin begins with our rye whiskey base that is distilled into vodka. The vodka distillate is then vapor infused with juniper and a thoughtful selection of seven herbs and botanicals. A blend of Plantation Rum's oldest reserves, this rum is something else. Sometimes, the English language just doesn't have a word for something. There are words like YOLO, twerk, and OMG, but for some reason there isn't a plural word for "you." Sorry, but "ya'll" or "youse" or even "you guys" doesn't quite fill the lexical gap. Our Lexical Gap IPA is straight west coast, you guys (see what we did there?). Brewed with massive amounts of Citra, Centennial, Simcoe, and Columbus hops, finding a word to describe your gratification might be pretty tough. Most expletives, however, will probably suffice.

Batch 88 is an easy drinking port-style wine with ripe fruit and nutty elements, that place it somewhere between a ruby and a tawny. It is warm, smooth and rich with a chocolate raisin character. Delightfully warming by itself, Batch 88 also pairs well with cheeses or with chocolates. Why do we call our "port" Starboard? Port is a geographic term for fortified wines that come from the Douro River Valley in Portugal. Starboard, the nautical term for right, (as opposed to port – left) is unique to our place, the San Joaquin Valley, California, on the other side of the world from Portugal. We use the same grape varieties and similar methods as in the Douro, but our climate is warmer and the soils different. Instead of 140 proof fortifying brandy, we use a neutral grape spirit of 190 proof. We use 60 gallon barrels instead of the 140 gallon pipes used in Portugal. Starboard matures earlier and has a riper more voluptuous flavor. The grapes in Batch 88 are primarily Tinta Roriz. The vineyard is managed to give loose bunches and a small crop. Several different vintages aged an average of five years are used in the blend. In the port business this type of blend is called "Vintage Character." The first year we made wine in this style was 1988, thus the nickname Batch 88.

The DAOU Vineyards Cabernet Sauvignon shows characteristics that are rich and sophisticated on the nose with currant, black cherry, cedar and eucalyptus, and displays undertones of briary blackberry and wet gravel. Ancillary aromas of coffee and cocoa are rounded out nicely with notes of crushed sage and baking spice. Full bodied and formidable on the palate, offering enticing and juicy wild blackberry, Oregon blueberry and crisp black cherry flavors. Hints of plum and mulberry are accentuated with fig, black olives and fine leather. Excellent structure and harmony between the pure fruit core and firm, supple backbone of polished tannins. Finish is surprisingly elegant for a wine of such power. Silky and smooth, ending on lovely notes of sweet cherry and boysenberry.
