I've been to Defiance three times now and have zero complaints. The staff is friendly, the environment is perfectly mellow, the music is what I listen to at home, and both the food and beer are amazing. I've tried different meals all three visits and they're all great, but I can't get myself to order any other appetizer except for the cheese curds with the garlic sauce. Those babies are heavenly! As for the beer, I'm not a beer drinker, but Defiance's craft beer sets a different standard. I've tried the oatmeal stout, the brown ale, and the amber ale with all three being amazing enough that a non-beer drinker is highly impressed. (Apologies for not remembering the fun names.) Thank you for existing. You feel like a home away from home.

Nice place. Order yourself at the counter and they still ask for a tip. I know their beer is very good, but the food is absolutely horrid. My Philly cheese steak was so dry and the meat tasted old. All of us ordered something different, and it was all bad. Rueben didn't even taste like a Rueben. Appetizers came out the same time as the food. The wings were so over-cooked, you could not eat them because of how hard they were. Very disappointed and will never be back.

We came on a Friday evening and it was a little loud, sitting at a booth instead of the cavernous main room helped with the noise. The beer was pretty good, but food took forever!
I ordered a Southwest Salad with fried chicken, and asked to have it served as a wrap. 40 minutes later I got a very hot wrap that was mostly sauce and meat with some wilted lettuce- not at all what I thought I ordered. Big disappointment because I was craving a salad and thought having it served as a wrap would be cool and easy to eat.
My partner’s pizza came about 10 minutes before my order, and he said it was OK, not great.

We love the Ghost Stories Smores Stout. I hope it is a regular offering and not just seasonal. Plus, it was only $7 for a 23 oz pour.
We had a hard time picking between the various sandwiches, burgers and pizzas. I had the Philly Cheesesteak (They were out of the Reubens) and it was one of the best I've had. My wife loved the Gouda Goodness sandwich. The Tater Tots were good and crispy on the outside and stayed that way a long time.
We'll be back to try others.

We drove 20 minutes from Rush Center to eat here and this place did not disappoint. Food was fresh and delicious. Highly recommend the Down the Hatch burger and Big Bird chicken sandwich. The parm truffle tots were to die for. Also recommend the Strawberry Basil Gose, very refreshing. Neat place inside and the workers were super helpful and friendly. The prices were super reasonable.

I just dropped in for a beer. I ended up ordering several IPA's and a Downtown Hoedown Pizza. The wood fire pizza, is incredible! The IPA's are Unique and very delicious. Color me impressed. I wish I was in the area longer.
Great place! We are from STL and stopped here to eat the night we are here in Hays.
The prices were great and the portions were large! Their loaded tots were amazing and the burgers looked awesome too.
Everyone was very friendly too, will definitely come back if we are in Hays again!

Great place to hang out and unwind. Beer was delicious. I especially liked the sours. The burger was very average and underwhelming. The pizzas looked amazing and I wish I would have had that instead. Prices were surprisingly low as our order would have been double the price back home
