It’s one thing to have a brewery located along Old US Highway 40, the Victory Highway in the old days, but it is quite another to have a second taproom also located on this historic ribbon of road. Defiance Brewing Company does just that with their brewing operations and taproom on the far east side of town, as well as their downtown taproom.For road geeks, US 40 once connected Atlantic City NJ with San Francisco, but has been truncated to Park City Utah, and replaced in various other places by the interstate. But sufficient old fragments of the route still exist, typically within the cities it once passed through directly. Hays is a good example.But back to beer!I started with four four-ounce samplers so I could get a feel for their offerings, selecting West Side German Pils (5.2% ABV), Gillicus island NEIPA (6.5% ABV), Vice Versa Kölsch (4.8% ABV), and Big Money Hazy IPA (5.7% ABV). Each of these were excellent in their own right, which made it tough picking a winner for quaffing a couple of pints. Gillicus it was, though, and O I downed a couple of those, and also bought a 64-ounce glass growler to bring back to Texas.I should note that the West Side was brewed to be released concurrent with the annual chapter of the West Side Chapter’s annual swap meet, which attracted breweriana collectors from as far away as Massachusetts and Arizona. Collectively, we all downed quite a few cans of West Side at the event.Overall, Defiance has done a superb job crafting beers in their decade of existence. I have no doubt their other offerings are equally stellar. Two thumbs up, and one worthy of a return visit or three!

This was a great venue! I loved the beers! Cool place. Some blue grass music when we arrived. Wish we lived closer!!! Don't pass up this brewery!! My favorite was the hazy Ipa .....my hubbie lovedpeachie keen...

Watched brewing abd canning of the Westside Brew for the Westsiders Chapter and the German pilsner is excellent. Cool watching the canning and labeling process.

I was a road trip, and was just passing through town and decided to try this place and it was awesome! The wait staff was so friendly and the place was clean and welcoming. Had a Southwest wrap and it was absolutely perfect - the sauce, the ingredient ratio, everything. Highly recommend :)

We celebrated my 73rd birthday with Cheddar cheese, pimento cheese, bacon, onions on fresh hand shaped burgers with a side of fries; Hays area folks should try it!
