I’ve tried Verdant twice now- once to celebrate Valentine’s Day & again to celebrate my birthday. Both instances the food & service was absolutely amazing! I was so impressed with the atmosphere & style of the restaurant-something new & modern which is much needed for Hays! I was also impressed with their menu! Great, unique dishes that are somehow so creative while still being a “safe” option for those who aren’t as adventurous with their meals. The flavors of any dish are perfectly curated & definitely not something you can get at another restaurant in town. The prices are so fair for the quality of food & the portion sizes are perfect, leaving me completely satisfied. I am so grateful to Austin & his team for creating a fresh & exciting restaurant environment for the people of Hays. I look forward to dining here again, hopefully SOON!

I don't get these good reviews. Made reservations but got bumped for some reason so waited for 30 minutes to be seated. No service at 1 hour after being seated and then when we finally got our food it was terrible. Maybe the cook took the night off or maybe they ran out of good steak and went to the dollar store to replace it. Either way it was bad.

I couldn't believe how amazing this Bistro was in Hays, KS. The food was clearly handmade + delicious and the service was great. Definitely worth the 10min drive off I-70 of you're driving through!

I never leave reviews but.....Hays Kansas you have a hidden gem!! We stopped in for lunch, on our way to Denver, the food was fantastic! Prices were super reasonable. Our waitress was also amazing! There are not many places you can get "Real Food" these days, this food was real.

The whole place just work! The food was amazing, unique, and played very professionally.
Highly recommend for a special night or for an above average meal.
They also have this separate room with a couch for like a small gathering, probably 10 people, so perfect for a fun dinner party night with friends!
