There’s something magical about this place. The atmosphere is quiet and romantic, but also welcoming for solo diners like me. I ordered the spinach and ricotta ravioli in brown butter sage sauce, and every piece was tender and bursting with flavor. The focaccia that came on the side was warm and olive-oil soaked, just how I like it. I stayed for tea and lemon tart after, savoring the entire experience. A place worth lingering.!!!!!!!!

Verdant Bistro is an absolute gem in the heart of Hays. I had the salmon with Brussels sprouts, and every bite was thoughtfully prepared, perfectly cooked, and full of rich, layered flavor. The entrance and building might cause you to pause and reconsider your choice of eating establishments. Enter in and wend your way toward a a lovely appointed room with a touch of elegance. Be prepared ro enjoy a five star La Maison dining experience ( Without the five-star price.) The house prepared focaccia bread is it exquisite. The crépes? Phenomenal!

I’ve tried Verdant twice now- once to celebrate Valentine’s Day & again to celebrate my birthday. Both instances the food & service was absolutely amazing! I was so impressed with the atmosphere & style of the restaurant-something new & modern which is much needed for Hays! I was also impressed with their menu! Great, unique dishes that are somehow so creative while still being a “safe” option for those who aren’t as adventurous with their meals. The flavors of any dish are perfectly curated & definitely not something you can get at another restaurant in town. The prices are so fair for the quality of food & the portion sizes are perfect, leaving me completely satisfied. I am so grateful to Austin & his team for creating a fresh & exciting restaurant environment for the people of Hays. I look forward to dining here again, hopefully SOON!
