McPherson, KS. Holy COW. The absolute BEST fajitas we have ever had. Like a dance party in your mouth. The salsa was so fresh and refreshing… delicious. We got the cheesecake chimichanga with raspberry for dessert to go. We got to the truck and it smelt so good so we took a bite and melted into it. If I wasn’t full I’d order a second plate. They are from ElPaso, started in a food truck, and made home base here I think they said a year ago and the boss lady has it going on in that kitchen. 🤤 we’re from Waco, and trying to plan the next roadtrip through here just to eat here. If you live here and have not eaten here you should be ashamed of yourself because you’re missing out.
First & last time eating there.....the hamburger street taco I ordered had so much grease on it I had to use a large napkin to absorb it...(obviously they didn't drain the grease from the hamburger)...then the carnitas street taco I also ordered was dry & tough.....(wasn't tender or juicy like I've had in the past at other Mexican restaurants) So disappointed ☹️ the meat had no seasoning or flavor either!!!

We found La Jefa as a pink taco truck at the motorcycle rally in Marquette, KS. We were so happy when they opened up a restaurant in McPherson! The food is always fantastic, great service and at a fair price. This place is a must try! We make the trip from Salina just to eat there!

Absolutely LOVE!! Literally everything is amazing!
I stopped here on my way to Chicago. I ate some chilaquiles, the taste was good. However, the service was very poor. Also, the fact that the restaurant shares the space with other businesses, I didn't like that. Something you'll notice when you open the door, the whole dining room smells like tacos, gorditas, chilaquiles. They need to get a better cooker hood filter. I went home, and my jacket smelled like tacos. I don't know if I'll go back.

I got the smokehouse tacos. The slaw was great. The brisket was very dry and tough. It did not have much flavor.

Excellent food. Excellent service. Zero wait time for seats & almost no wait time on food. Servers are super attentive and very friendly. Our waiter even let us sample some of the new dessert options for free. Try everything!! My favorite are the original little street tacos (pollo/carnitas), but it's all amazing!!

The right Hours aren’t listed. I just came in on Saturday at 9pm and they are closed. Sad I wanted to try it
Worst experience ever! Wednesday 12/18/2024
Was sat down at a table with silverware and a menu. After that, nothing!!! For 15 minutes, staff would go back and forth past me and not stop to take any type of order. Watched a party of 4 get seated two tables away and instantly get served chips and salsa as well as take their drink order. Another person was sat down as well.
If you don't want my business, just tell me that before sitting me at a table.
I just got up and left. No one said a word. That's pretty sad, since they were not very busy at all.

Since its opening, my friends and I have made it a point to eat at La Jefa on a regular basis, and more often if we can. It's that good. The food is amazing and the staff are always friendly, especially Mariah, Esmeralda and the other servers who know us as regulars. Even the new faces seem to enjoy the job when they first start out. I also have the pleasure of occasionally doing business with them at my job where the tables are turned, and the experience is always just as positive (shoutout to Joel and Dora!). Everyone's always in a good mood and has fun when serving their delicious food. It shows they care about the work they do and the people they serve.
