Pickleman’s has Columbia, MO roots and a small Midwest footprint. Creative sandwiches and friendly staff, but in KC’s sandwich scene, value and execution matter.
This carryout order: Italian Beef (#9) – Beef dipped in au jus and topped with giardiniera. Juicy and flavorful, with extra au jus for dipping. Best of the bunch. Chipotle Chicken (#17) – Chicken, lettuce, chipotle ranch. Flavor’s there, but the chicken’s coated in sauce before toasting, which makes it mushy. Season and grill first, then add sauce (like a condiment) afterward—it would shine. Asiago Chicken (#6, previous visit) – Chicken, bacon, provolone, asiago Caesar dressing. Good flavor but salty; same sauce-before-toasting issue.
I like that many of these proteins (Italian beef, chipotle chicken, asiago chicken, Hogfather) also show up on their tavern-style pizzas, which I’d still like to try.
Why three stars? It’s not the food—quality is solid—but compared to other sandwich shops, they rarely run deals or coupons. In a competitive market, value matters.

I love picklemans, quality sandwiches, wonderful crusty toasted bread, fresh ingredients, crisp tasty pickles, can't go wrong. Good people running a good sub shop. They put a free cookie in my bag just cause sometimes too so if that doesn't sell you idk what to tell you

The sweetest teens & young adults work here. The best sandwiches, and they are so accommodating when they didn't get the order quite right.
I love this place, but they always slice through the wrapping paper. Recently, they switched to wax paper, and it’s getting much more stuck in the sandwich. Yuck. I have had to pick tiny pieces out every time. You have the best sandwich in the area. Stop ruining it.
