Lack of attention to cleanliness. Upon reading on the new owners and seeing their accolades and degrees in baking/culinary from more prestigious schools than I've been to, I am actually more perturbed.
Also, why are you understaffed on a busy holiday weekend? Your staff should be wearing hairnets in the kitchen. And should not be handling prepared food with bare hands. A piece of bakery paper does not count. Flour on the floor in the customer areas is a trip hazard...
