I really wanted to like the food at Bishco. Their menu is great and their staff, very kind, but it was a let down.
We ordered the artichoke melt and the breaded eggplant and mushroom melt. Both are really large sandwiches but the eggplant sandwich was grilled some more than the artichoke one. Coming to the flavors - the mushroom and eggplant sandwich was bland. It could have done with more flavor. So, a spread or condiment inside the sandwich (like tomato passata or pesto for an instance) could have elevated the sandwich.
The artichoke sandwich did have some flavor to it thanks to the olive spread but everything together just didn't work for me (although it was better than the other sandwich). I thought it was a bit too sour, and something like caramelized onions or garlic may have made a difference in how it tasted.
However, my biggest suggestion to Bishco would be for them to rethink the cheese they are using in the melt. The one in our sandwiches was quite bland but I know that goat cheese/cheddar would have really turned things around for them. Ultimately, great potential and I want to see them doing well.

Cafe Bishco ALWAYS has excellent, freshly made food. There are many healthy options & a great variety of smoothies & desserts, too. The staff is courteous & helpful. Located in a building in Gloucester's historic West End, the building is constructed of Cape Ann Granite & in decades long ago was a bank, an antique shop & other businesses. Best of all they deliver!

Very sweet soup and sandwich shop, just right for a break from gift shops and sight seeing. The bounty of choices is posted on the wall. The staff was cheerful and welcoming. Nice choices for vegetarians.
Ordered a couple sandwiches to go and they took a really long time to make and were pretty mid. Seems to be one of those places that's doing too much so it doesn't do anything particularly well

I’ve been going to Bishco regularly for 5+ years and can say it is my go-to because of its consistency and freshness. Whether it is a perfectly pressed panini, a deliciously cooked chicken and rice bowl, or a refreshing froyo, I can always plan to enjoy my meal. Even on a Friday night rush they have the order right each and everytime. You can visibly see how passionate their staff is but beyond that it reflects in the food. I will continue recommending Bishco to everyone looking for a fresh reliable meal!
Dietary restrictions: Their tofu froyo is the only lactose free frozen yogurt I’ve found that truly tastes as good as the original!

Stopped by for lunch after a whale watching tour. Was looking for a quick bite to eat, and was not disappointed. We have an extensive menu with a ton of options for both hot and cold sandwiches and Panini‘s. I got the chicken and basil pita rolled sandwich, which was pretty damn solid and it came with a bag of chips. Cashier and staff were very quick and very friendly. Clean interior. Would recommend.
