I walked into Mahaffey’s Pub expecting a good beer and a decent bite. I did not expect to have a life-altering, borderline spiritual moment delivered to me in the form of a cheesesteak so glorious it deserves its own mural in Canton.
The kitchen is right in the front of the bar, so you get to witness the artistry firsthand. Watching them build this sandwich is like watching a blacksmith forge a legendary weapon: the sizzle of the steak hitting the flat top, the rhythmic chopping, the careful layering of cheese until it melts into a glossy, golden river… I was hypnotized before it even hit the plate.
And when it arrived? Pure perfection.
The meat is tender, seasoned, and stacked with the confidence of a bar that knows it’s serving the best cheesesteak in Baltimore. The cheese isn’t sprinkled—it’s fused, bonded to the meat like it was born there. The roll is toasted just enough to hold the avalanche together, but soft enough to disappear into each bite. Add the fresh crunch of lettuce and tomato and you’ve got a cheesesteak so balanced it could win a Nobel Prize in Structural Engineering.
