Starters
Iron Skillet Cornbread
Six (6) slices of fresh cornbread baked with buttermilk, creamed corn, jalapeno peppers, and serrano peppers. Served in an iron skillet.
House Salad
Mixed greens, julienne carrots, spiced pecans, goat cheese, Campari tomatoes, and cornbread croutons, tossed in our signature Adobe dressing. Served with a slice of cornbread.
Caesar Salad
Romaine lettuce, red peppers, and cornbread croutons, tossed in Caesar dressing. Garnished with shredded parmesan cheese, and served with a slice of cornbread.
Chicken Tenders
Served with french fries, BBQ, and honey mustard.
Fiesta Eggrolls
Tomato flour tortillas stuffed with rotisserie chicken, black beans, corn, spinach, diced red onions, red peppers, Monterey Jack cheese, and smoked cheddar cheese. Served with our Campfire sauce and tortilla strips seasoned with New Mexico chili powder.
Spinach and Artichoke Dip
Fresh spinach, artichoke hearts, and onions, blended with Monterey Jack tossed in a Parmesan cheese sauce. Served with fresh tortilla chips.
Calamari
Lightly fried calamari tubes topped with parmesan cheese. Served with marinara sauce

Club Salad
Crispy chicken, mixed greens, tomato, avocado, Smokehouse bacon, Monterey Jack and cheddar cheese, croutons, and honey chipotle dressing.
Rotisserie Chicken Salad
Rotisserie chicken, mixed greens, black beans, tomatoes, jicama, corn, carrots, Monterey Jack, avocado, corn tortilla strips, chipotle-blue dressing and BBQ sauce.
Caesar Salad
Fresh Romain, cornbread croutons, and julian red peppers, all tossed in our house made Cesar dressing and topped with grated Parmesan cheese.
Salmon House Salad
Mixed greens, julienne carrots, spiced pecans, goat cheese, Campari tomatoes, and cornbread croutons, tossed in our signature Adobe dressing &  a slice of cornbread. Served with hardwood grilled salmon cooked to your desired temperature.
Salmon Caesar Salad
Fresh Romaine, cornbread croutons, and julienne red peppers, grated parmesan cheese all tossed in our housemade caesar dressing with a slice of cornbread. Served with hardwood grilled salmon cooked to your desired temperature. 
Seared Ahi Tuna Salad
Seared sesame-crusted ahi tuna accompanied with baby field greens, mango, avocado, red peppers, red onions, and wonton strips tossed in our honey sesame vinaigrette.
Marinated Steak Salad
Seared filet over mixed greens, red onion, tomatoes, Asian pear, smoked gouda cheese, cornbread croutons, and honey sesame vin.

"The Stanford" Cheeseburger
Hardwood grilled Angus beef topped with Monterey Jack and cheddar cheese, lettuce, tomato, onions, bread and butter pickles, mustard, and mayonnaise on a toasted sesame seed bun. Served with french fries.
Crispy Chicken Sandwich
Buttermilk chicken breast, topped with coleslaw, Swiss cheese, tomatoes, and mayonnaise on a brioche baguette. Served with french fries.
The Impossible Burger

Rattlesnake Pasta Plate
Fresh rotisserie chicken with garlic, tri-bell peppers, mushrooms and lime juice. Tossed with linguini pasta in a Cajun Alfredo sauce. Topped with smoked mozzarella cheese and chopped cilantro.
Short Smoked Salmon Plate
Marinated, quickly smoked and finish on the grill, topped with mustard sauce and served with mashed potatoes.
Hickory Grilled Tenderloin Filet Plate
Hand-cut tenderloin steak, Gorgonzola bleu cheese butter and Cabernet sauce. Served with mashed potatoes and sauteed spinach.
Chicken Parmesan
Hand breaded, pan fried chicken breast, topped with homemade marinara and mozzarella, accompanied by linguine pasta and sautéed spinach.
Prime Rib
Slow – roasted and deeply seasoned. Accompanied by au jus and horseradish sauce. Served with mashed potatoes.

Chopped cabbage, green onions, and parsley tossed in a sweet, creamy blend of mayo, sugar, Dijon mustard, relish, and rice wine vinegar.
Green Beans
Fresh green beans that are first blanched, then sautéed in sweet cream butter, and seasoned with kosher salt and fresh-cracked black pepper.
Spinach
Fresh baby spinach sautéed in sweet cream butter, and seasoned with kosher salt and fresh-cracked black pepper.
Mashed Potatoes
Idaho potatoes tossed with sour cream, butter, kosher salt, fresh-cracked black pepper, and green onions.
Bacon Mac and Cheese
Diced onion, applewood bacon, and cayenne pepper tossed with sharp white cheddar cheese, cream cheese, and spiral noodles, topped with smoked cheddar cheese, and baked until golden brown

Desserts
Key Lime Pie
Graham crackers, walnuts, and pecans, made into a crust, and filled with a house made key lime custard. Topped with house made whipped cream, and finished with ground nuts.
Bread Pudding
Chunky French bread and raisins, mixed with a sweet Grand Marnier cream custard, topped with butter and sugar, and slowly baked until caramelized. Topped with more sweet Grand Marnier cream custard, and garnished with cocoa powder, raspberries, and a mint sprig.

Copper Canyon has been one of our family ‘s go to restaurants for family meals, after work dinner and cocktails, and even outings with friends. However, I doubt that we will continue bringing our business to the downtown Silver Spring restaurant any longer. My boyfriend got us a reservation at the Vibe on Valentine's Day, but for a plethora of reasons we ended up walking out.

So we are now reservationless on Valentine's Day. We go to Copper Canyon and of course we couldn't reserve a table, but there was space at the bar! We happily accepted and made our way. The hostess ended up giving me a beautiful rose.
