The taste is pure apple because it's not pasteurized or treated with chemicals. I can't prove it, but I think most cider mills use all the apples including those off the ground. These mills rely on pasteurizing to kill off any bad stuff unfortunately it also affects the taste. Westview picks the apples off the tree and will tell you what variety is currently being used.“
