I have to share my experience with Emily Mai’s Pho and More at the Midland Mall food court. As a vendor at Comic Con Midland Mall, I needed a quick bite to eat before heading back to my booth. The mall was packed, and every food court line was long (which was great to see!), so I looked for the shortest one—and that happened to be the Vietnamese restaurant. I’d never had Vietnamese food before, but I saw fried rice on their menu and figured that would be a safe bet. When I got to the register, the gentleman kindly apologized and said they weren’t doing stir-fry items due to a staff shortage. Totally understandable. Then I asked, “What is Pho?” He explained it to me, and in my completely uneducated way, I asked, “Like ramen noodles?” He quickly said, “No, ramen and Pho are like apples and oranges.” By this point, the line behind me was growing, so I just said, “I’ll take it!”—still not completely sure what I was getting. He explained I’d receive two containers: one with hot broth and another with the Pho. I was supposed to pour the broth over the Pho and add a little bag of fresh basil. He even told me, “Trust me, put the basil in.” I got everything back to my booth, set up in my little vendor chair, and stared at this steaming bowl of something completely new to me. I wasn’t sure if I even liked basil. I saw jalapeños in there and thought, Oh no, I don’t want it too spicy. But I let it all simmer together, cool down a little, and then finally took my first bite. And WOW. I have never been so surprised and pleased with what I was eating. The only way I can describe it is: That’s as good as “Grandma” makes! And my grandma was a phenomenal cook! The flavors were perfectly balanced, nothing overpowered anything else—it was just pure comfort in a bowl. So, if you’ve never tried Pho before, TRUST ME—you need to go to Emily Mai’s Pho and More. You will not be disappointed. In fact, you’ll probably walk away with a new favorite meal. I know I did!

Finally got to try this place out and wish we had done it sooner. Fried spring rolls were good in the absence of the sold-out fresh ones. Banh Mi Thit Cha Lua sandwich was also fresh with a nice flavor. The #3 Pho Bo was very well done - all of the extras and a decent amount if quality beef - very flavorful and filling. The panna cotta for dessert was a nice surprise, the portions were small but very tasty when mixed up. Service was friendly and food was made fresh to order. We will be back.

I was impressed with pho and the service. The gentleman at the register explained how pho and the Vietnamese coffee worked. The herbs and spices when added to the pho, intensified the flavor over time. The coffee did the opposite, strong at first sip, got milder over time. Both were new and different flavors. Will be back!

The Pho is the real deal, homemade broth with a great depth of flavor. The beef is great quality, not chewy or tough. The sprouts, thai basil, lime wedge, and jalapeños (all served on the side) are fresh. The are plenty of noodles as well. I asked for my order of Pho (#3 on the menu) to go, it was well packaged with the broth in a styrofoam container and the beef, noodles, etc. in a separate container. I ordered the large serving and it was plenty for 2 people. The cost of $17.99 was very reasonable for the quantity. They do have a smaller size available. The people behind the counter are friendly and informative. I hope to see this business in a stand alone restaurant in the near future.

It seems pricey but you receive a gigantic bowl of delicious pho. For me, it's at least two meals. The freshly-made fried spring rolls are also delicious. It's nice to have tasty food at the mall food court again.

I recently dined at this restaurant, and I have to say, the pho is absolutely fantastic! The broth is rich and flavorful, easily one of the best I’ve ever tasted. The spring rolls were incredibly fresh, bursting with crisp veggies and a perfect complement to the pho. What really stood out, though, was the customer service—it was hands down the best I’ve ever experienced. The staff were attentive, friendly, and made sure we had everything we needed. I’ll definitely be returning soon! Thanks Emily and Winston!
