we had an amazing time eating at staff meeting, but the highlights were the tonkotsu broth and the ribs. the atmosphere at eat street is fantastic, and staff meeting exemplified the community atmosphere and incredible flavors promised by the food hall.
The tonkatsu ramen was solid. The pork was pan cooked and had a crispy char. The broth was very creamy. The egg was simple. Overall satisfying bowl of ramen but I'm used to things a little different.
Simple, no frills, just damn good. Possibly one of if not THE best ramen joint in the Twin Cities. All these other Ichido chain franchises are run entirely by Chinese staff, which is all good and fine but just formulaic. The head chef here knows wtf he's doing and it shows. So much flavor packed into such basic, standard dishes!
