As a daily coffee drinker, I look for local shops to try different flavors and found this shop at the airport on my way to Minnesota. This exceeded my expectations in all the right ways! The beans are roasted and ground for each cup, traveling up vaccuum tubes (it's really entertaining to watch). When I drink a latte, I want to taste the coffee, not just a cup of sugar. My white mocha was well-balanced and not too sweet. Before my flight home, I had to go back for another...
We have a winner! Expectations are low for airport coffee, but I’m not sad about this!
Pros: you get to pick your beans and it it brewed to order. Also, a robot makes your coffee.
Cons: the roast for the Ethiopia Yirgacheffe I ordered was too dark. A lighter roast wouldn’t bury the acidity so much. You can tell a Starbucks alum was involved in this. Also, a robot makes your coffee.

I just wanted to give a little shout-out to Claire. I walked in today and waited patiently behind 2 (difficult) customers back to back and she handled both of them professionally while she balanced making (and re-making each order) on her own.
