I stumbled upon Trieu Chau in 2011 and kept coming back on all my subsequent annual visits to the Twin Cities. When I finally moved to Minnesota in 2020, I was thrilled to be able to dine here more frequently.
Today was a disappointing visit.
The pho has changed. It was thinner, sweeter than I remember. Not terrible, but not memorable. At this point I’ve been eating here multiple times a year for 14 years; something was very different.
Also—for the first time ever, they refused to take my international credit card. This has never happened to me anywhere in Minnesota. My card isn’t even an Amex or Discover, but a boring old Mastercard. It should have had no issue going through. Luckily I had some cash on me but this soured my experience too.
The positives—noodle portions are still decent. Great table service. Love the diner feel.
Unfortunately, unlikely to visit again, especially with the card issue.

With Trieu Chau coming back recently, I just had to go try out and see how differently they updated their restaurant.
It still stayed the same as before with some minor changes, which is a good thing. It still feels really nostalgic.
A cons I would say was the menu. They don't conclude any allergic info within the menu, so you'll have to ask how they prepare their food, especially their broth. (My buddy has a shrimp allergy. luckily, we stop him and asked the waiter before he ate it.) Maybe proofread their menu again and redesign it again.
It might just be me, but it was definitely a hit or miss. Will try again and taste the other menu.
Parking: Parking is only so much and based on how busy it gets.

The pho is phenomenal! my favorite is #146. The spring rolls are made fresh and they are delicious. They just opened last week and I've been there 3 times! welcome back 😊
Pho was ok but the broth was murky even though it looks clear. Taste was on the sweeter side with a lite hint of beef flavor. Even the steak had a sweet after tone taste. The pickle jalapeño was different adding to the sweetness of the broth. The pork and shrimp wonton is ok.

Pho was sweet - it left a sweet aftertaste too. I think they use flavor paste for both pho and bun bo hue broths. Personally, not a fan.

Really disappointed in the grand re-opening but not even because of the food. We (family of 4) came at a relatively unbusy time. The restaurant was not full, and yet we couldn't get our order taken after waiting for some time. The thing is, tables that came AFTER us and even right next to us got service. The setver even asked the table next to us if they were ready to order and they weren't but didn't bother to check up on us. So we just got up and left. I

Cozy spot for solid pho
This is my go-to spot for warm comfort and nourishment. The pho and soups come in a thousand varieties. Ok, that's a small exaggeration, but it makes the point. The fresh ingredients and layered flavors keep me coming back. I usually do takeout. But the chef recently told me to eat on-site next time -- while the food is piping hot. I think I may do that! It's friendly, unpretentious, reasonably priced goodness.
